The newest trend is pancake cereal, so why not make a Keto recipe version of it that is kid-friendly? A simple pancake batter made from almond flour, egg, mayo, and baking powder is mixed together. The mixture is easy enough for every day, especially if you prep the dried ingredients the night before. Once the batter is made, use a small cookie scoop filled partially with batter to drop small dollops of batter into a hot pan.

How do I flip tiny pancakes?

A stiff spatula is the easiest way to flip small pancakes. Alternatively, if you are good with chopsticks, you can flip using this utensil as well.

Do I need to add oil between batches?

Yes, add a little coconut oil to the pan between cooking batches of pancake cereal.

What is the best way to cook pancakes?

Since these pancakes are so small, it is better to get the pan hot and then bring the heat down to the lowest setting to give you time to divide the batter into small pancakes. Once your pan is full of the little pancakes, you can adjust the heat up if you would like, but most likely, at that point, the first pancakes made will be ready to be flipped.

  • Step 1

    Combine all ingredients together except the coconut oil, butter and syrup together in a bowl. Whisk together very well and set aside.

    Preheat a large nonstick skillet over medium heat until hot. Add 2 tsp of coconut oil and swirl the pan. Drop the batter into very small pancakes all around the pan. Be sure to turn your heat down to the lowest setting while you are making the pancakes so they do not burn.

    Once you have filled the entire pan with small pancakes, begin flipping the first pancakes you made. Cook them for a few seconds on the second side. Remove them to a plate. Repeat with the remaining pancake batter, using the coconut oil to grease the pan between batches.

    Place pancakes into a bowl and top with butter and syrup!

    This recipe makes no sense. Says almond flour but lists only 2 tbs of coconut flour. Typo or what? Carbs don't match either. What's the real recipe?

      Was it suppose to have almond flour in it. Almond flour was mentioned above but not in the ingredients

        Great recipe! I added a little monk fruit and cinnamon and am so happy with how they turned out. Don’t be afraid of the mayo! You can’t taste it and it helps with the texture of the pancakes.

                It helps to keep it moist without it drying out whilst you're cooking it. Professional chefs use mayo in there bakes all the time to prevent them from drying out while cooking

              These are delicious! I like to add a touch of Monkfruit or Erythritol and vanilla extract. I added powdered erythritol after cooking this time and reminded me of funnel cake!! 🥰
