Ingredients
Broccoli Florets
4 Cup
Olive Oil
2 tablespoon
Lemon Juice, Fresh
2 teaspoon
Lemon Peel Or Zest Raw
1 tsp
Pine Nuts
1 tablespoon, whole pieces
Garlic
1 clove
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Trim the tops of the broccoli florets using kitchen scissors to create small rice sized grains. You should have around two cups of rice.Step 2
Add the pine nuts to a dry pan over a low heat and toast for a minute or two until lightly golden. Set aside.Step 3
Heat a tablespoon of olive oil in a small pan over a low/medium heat. Finely slice the garlic and add to the pan, sweating until tender.Step 4
Add the broccoli grains, lemon juice, remaining olive oil, lemon zest, salt and pepper and stir well to combine. Cook for just a minute or two until the broccoli is hot through.Step 5
Top the rice with the toasted pine nuts to serve.

I liked it better without the pine nuts, but tasty side dish. I added chopped cooked bacon, then threw a fried egg on top, and voila - breakfast.
