Our low carb skewers are prepared with jumbo shrimp, tender prosciutto slices, zesty lemon, a hint of garlic powder, black pepper and olive oil. These make a tasty protein option served with your favorite Keto sides.
Can I Use Raw Shrimp?
We have used cooked jumbo shrimp for our Keto skewer recipe. Cooked shrimp are a great budget-friendly option that can be cheaper and more accessible than raw shrimp. However, these tasty skewers would be just as delicious prepared with raw shrimp. Simply follow the recipe as directed using the raw shrimp and be sure to cook the shrimp through completely so that they turn from grey to pink.

Step 1
Cover 4 bamboo skewers with water to soak while you prepare the ingredients. Add the jumbo shrimp to a bowl with the lemon juice, zest, garlic powder, black pepper, and olive oil. Mix well to combine, coating the shrimp in the seasonings and oil. Set aside to marinate for 15 minutes.Step 2
While the shrimp marinade, tear/cut each piece of prosciutto into 8 pieces. You should have 32 small strips of prosciutto in total. Wrap each piece of prosciutto tightly around one of the marinated shrimp.Step 3
Preheat the broiler to high. Thread 8 prosciutto-wrapped shrimp onto one of the prepared skewers. Repeat with the remaining shrimp until each skewer is full.Step 4
Arrange the shrimp across a grill tray and brush with any remaining marinade. Place under the broiler for 3-4 minutes or until hot through, and the prosciutto is golden. Serve with your choice of low carb sides.
