Step 1
Finely chop the onion, fresh sage and cranberries and crush the garlic. Add to a mixing bowl along with the thyme, ground pork, salt and pepper. Use your hands to mix together well until thoroughly combined.Step 2
Divide the mixture into 12 even portions and roll into meatballs.Step 3
Heat the olive oil in a skillet over a medium/high heat. Add the meatballs and cook through completely until golden brown all over.Step 4
Arrange three meatballs per lettuce leave to serve.
