  • Step 1

    Preheat the oven to 320 degrees Fahrenheit, 160 degrees Celsius, and line a shallow oven tray with baking paper.

    Add the almonds to a food processor and blend to a chunky crumb.

    Add the almond crumb to a large mixing bowl with the flax, pecans, walnuts, cinnamon and xylitol. Stir well to combine.

    Pour the liquid coconut oil over the nut mixture and stir well to ensuring the mixture is evenly coated in the oil.

    Arrange the granola across the lined oven tray and bake for 35-40 minutes, turning regularly.

    Remove the granola from the oven to cool completely before stirring through the chocolate chips and coconut flakes.

    Serve with ice cold milk and store any leftovers in an airtight container.

    I revamped the recipe so you can have 1/4 serving (instead of 1/6) = 8.75 (9) net carbs total and that includes 1 cup of coconut milk. I bought all the nuts from meijers. I used sliced almonds 1 cup = 9 net carbs, 1 cup walnut pieces = 9 nc, 1 C pecan chopped = 4 nc, 1/4 C Bob’s unsweetened shredded coconut = 5nc, 1 tbsp swerve brown sugar zero nc. No flax. Used the coconut oil and cinnamon and salt. Added chips while warm (4 nc) divided mixture by 4. Let cool for larger chunks and ate in a cup of coconut milk (1 nc). So 9+9+4+5+4=31/4=7.75 plus 1nc for milk = 8.75. I put the individual ingredients into carb manager app so I know it’s accurate:)

      Very tasty - however 1/4 cup is a tiny serving for 9 carbs - 😞 more than half of my daily allowance

        Looks like the serving size might be just under 1 cup because it’s ¼ of the made recipe, which has around 4 cups of ingredients in it. I agree though- 9 net carbs is a lot for breakfast. 🥴

      Question re the chocolate: I've seen unsweetened baking chocolate in bricks and bars, but never noticed unsweetened chips. Are they easy to find? Thank you. My hubs has been wishing for "cereal."

      I may or may not have eaten the entire batch slowly throughout the day.... totally threw off my diet...this stuff is like crack and I won't be making this one again........ :-D

      I made it but it turned out to oil. I like to eat ot as a snack without milk and it is too wet. I cooked it for 40 minutes.

        I made it and loved it (just assumed you put the salt in with the nut mixture. I didn’t notice that I bought sweetened coconut flakes. The recipe doesn’t specify unsweetened but, logically, sweetened coconut adds a lot of carbs. I haven’t found a sweetener I like yet because of the aftertaste (tried Stevia, Monk Fruit and was afraid to try xylitol). Of course my coconut makes it nice and sweet but too many carbs.

          I've tried alot. So far I found xylitol tastiest but carbs add up quick and second best is erythritol which I like the swerve brand . you can buy it at winco

              Hi Connie, dried fruit in general should be avoided on keto, however, this is dependant on your individual carb requirements - so you would have to see how this fits in with your macros.
