Keto Sourdough Cinnamon Rolls
Our Keto sourdough cinnamon buns are the best yet! They are made using a fathead dough prepared with mozzarella cheese, cream cheese, and pasture-raised eggs. If you can, try to use organic cheeses, as the grass and grains the cows are fed are glyphosate-free. The fathead dough is rolled out thin and then sprinkled heavily with a brown sweetener and cinnamon mixture. The dough is rolled up to create luscious swirls. The roll is cut into rounds, and then they are placed inside of a baking pan. The cinnamon buns are baked until they are GBD (golden brown and delicious). When the cinnamon buns are still hot from the oven, they are spread with a sweet, white glaze that fills all the crevices! You will love this Keto sourdough recipe! How is the filling made?
The filling combines brown sugar sweetener and Saigon cinnamon in a bowl. Since this recipe is Keto, the dough does not absorb creamy fillings. So we opted for a dry mixture like this one that will still melt, resulting in a sweet cinnamon filling perfect for Low Carb cinnamon buns.
Is sourdough bread Keto-friendly?
Traditional sourdough bread made with wheat flour is not Keto-friendly. However, we have created this Keto sourdough by making a fathead dough. Fathead doughs are very low in carbohydrates and are perfect for Keto and Low Carb diets.
What makes this sourdough bread?
We have made this fathead dough into sourdough by adding apple cider vinegar to create a tangy taste. Feel free to substitute the apple cider vinegar for lemon juice.

Mozzarella cheese
4 cup, shredded
Cream cheese
4 oz
Raw egg
2 large
Almond flour
2 cup
Coconut flour

Step 1
Preheat the oven to 350 F. Add the mozzarella cheese, cream cheese, almond flour, and coconut flour to a food processor. If this amount is too large for your food processor, make it in two batches and then combine them in a bowl.Step 2
Add in the eggs. Pulse to combine until well mixed. The mixture should look very dough-like at this point.Step 3
Once the dough is made, place the dough between two pieces of parchment paper or two silicone mats. Roll the dough out until it is a rectangular shape and is almost the size of the silicone mat (or about ¼" thick). Place the dough in the freezer to chill until firm but still flexible, about 5 minutes.Step 4
Combine the brown sugar sweetener with the cinnamon. Mix well. Sprinkle the mixture onto the dough evenly.Step 5
Tightly roll the dough from the long end. Cut the rough ends off of the roll. Then cut the roll in half. Next, cut half into four equal pieces.Step 6
Doing so should create eight equal buns. Place the buns in a greased 6" x 10" baking pan or casserole dish. Place the dish in the oven and bake for 45-60 minutes or until baked and no longer doughy.Step 7
While the cinnamon rolls are baking, combine the powdered sweetener with 2 tbsp of whole milk. Mix until a stiff frosting is formed.Step 8
Once the cinnamon rolls are done baking, remove them from the oven and allow them to cool for five minutes. Then, while they are still warm, spread the frosting over the top of the buns. Serve warm!

This recipe DID NOT HAVE a large amount of carbs. I'm a diabetic and can tell you that these rolls only have 6 NET carbs (it states this in the nutritional info). You subtract the alcohol sugar grams, the fiber grams and allulose grams from the total carb grams, as these substances DO NOT raise your blood sugar and therefore do not count against your carbs! The recipe had 47 TOTAL carb grams MINUS the 36g sugar alcohols and 5g of fiber which leaves 6 grams, the only ones that count. 🙄

I understand you can only take 5 off of alcohol carbs for net carbs so that’s 37 net carbs Five alcohol Five fiber total of 10 from 47 carbs = 37 net carbs

I think you have your Carbs wrong in your macros. It does not match the 6g noted with the picture. This is an on going issue with these recipes. Looks great though.

It's only 6g net carbs per serving. You don't count carbs from monk fruit, erythritol, or allulose. Those are the most commonly used and approved keto sweeteners.

Subtract the sugar alcohols. They go in your body and come out. They are not absorbed.
