Keto Creamy Salmon Pasta Salad
This creamy salmon pasta salad is light and refreshing – perfect for a quick weekday lunch.
The salad itself uses cucumber noodles in place of pasta and tinned red salmon as the protein, making it not only simple to prepare but budget friendly too!

Ingredients
Food Cupboard Fish All Tinned Red Salmon Wild Alaskan Pacific by Sainsbury's
7 ounce
Scallions
2 medium - 4 1/8" long
Cucumber, Raw, Without Peel
1 large - 8 1/4" long
Mayonnaise
1 tablespoon
Creme Fraiche
1 tablespoon
Dill Weed, Fresh
1 tablespoon
Capers
1 tablespoon, whole pieces
Lemon Peel
1 tablespoon
Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Peel the flesh of the cucumber lengthways into wide strips using a speed peeler to create the noodles. Add the noodles to a mixing bowl along with the salt and stir well to combine. Set to one side for 15 minutes to allow the cucumber to drain any excess moisture.Step 2
Whilst the cucumber is resting, roughly chop the capers and add to a mixing bowl along with the salmon, mayonnaise, crème fraiche, lemon zest, a pinch of salt and the black pepper. Stir together to combine, flaking the salmon and coating it in the dressing.Step 3
Drain the excess water from the cucumber noodles and blot with kitchen paper to remove any further moisture and the salt.Step 4
Top the cucumber noodles with the creamy salmon mixture.Step 5
Finely slice the scallions and roughly chop the dill. Scatter over the salmon salad to serve.

Haven’t tried recipe — thinking of another option for cucumber — palm hearts (mild artichoke flavor to me - if you haven’t tried). I buy a 14 oz jar (drained = 8.8 oz of palm hearts = 2g net carbs/40 cals) and then cut the 3” stalks into discs/medallions. I’ve also marinated them in sugar-free bread & butter pickle juice for added flavor. Good low-carb/cal pasta sub. Good day All! 🙏😎🖖

The palm hearts are also available in lasagna noodle shapes for "hamburger helper" type meals, angle hair pasta, and rice like shapes (great in soups) online and in Texas at HEB stores.

Didn't care for the cucumber noodles. If I make it again I would cut the cucumber up in short noodles maybe, might be better.

A better recipe for cucumber noodles is diy terriaki sauce or straight up soy sauce with a pinch of salt, pepper, ginger, garlic, red onion, sesame seeds either drizzled with toasted sesame seed oil or olive oil. Marinade, refrigeratorate, serve really cold. Yum!

This is super delicious! I used a pickle as I didn’t have any capers and sour cream for the crème fraiche. The cucumber “pasta”, mind blowing!

Fabulous! Used fresh salmon, sour cream (I’m allergic to eggs) and zucchini because I didn’t have a cucumber. The capers were a fantastic surprise, they added salty zing. This is a keeper!

I used zucchini noodles in place of cucumbers. I sautéed them in a bit of almond oil and then made the recipe. Very tasty!
