Ginger candy is delicious, but it is tough to find a sugar-free ginger candy option out there! Thankfully, ginger candy is super simple to make at home and very tasty. Freshly peeled and sliced ginger is boiled until soft. Then some residual ginger water and sweetener are added to the pan. The mixture is cooked until the water evaporates. The ginger slices are removed and dried on a rack until hardened. You can store the ginger candy in an airtight container after this point. These are great for those who love spicy ginger candy but are on a Low Carb or Keto diet! Sugarless ginger candy is excellent in pregnancy as well to help ease morning sickness.
What kind of ginger should I use?
Look for medium-sized ginger roots as larger ones tend to be more fibrous.
How long can homemade ginger candy last?
In an airtight container, homemade ginger candy can last for up to one week or longer.
What kind of sweetener is best for this?
I like to use powdered or granulated erythritol, but feel free to use any other powdered sweetener.

Peel the skin from the ginger using a spoon or a paring knife.Step 2
Slice the ginger as thinly as possible. Place the ginger in a small saucepan filled with boiling water. Boil for 30 minutes or so.Step 3
Drain the water except for ¼ cup of ginger water. Add the sweetener and stir it. Cook until the water evaporates. Keep a close eye on the mixture as the water begins to evaporate.Step 4
Once the water is almost completely disappeared, remove the ginger to a cooling rack. Allow the ginger to cool until hardened.

Love this really nice palet cleanser spicy and sweet .. my ginger was abit stringy so would go for small stems next time..
