Chicken fricassee is a classic easy French stew that is rich, creamy, and loaded with flavor. Tender chicken is browned and then gently cooked in a delicious wine sauce with carrots, mushrooms, and pearl onions. Finally, heavy cream, lemon juice, and parsley are added to finish off this dish. The white wine takes this dish to the next level, so make sure you use a brand you enjoy drinking. While chicken fricassee sounds fancy, it is one of the easiest French Keto recipes to master.
What chicken parts can you use for this Keto stew?
This dish is usually prepared with chicken drumsticks or thighs. In this recipe, we use drumsticks only, but feel free to use thighs only or both. Whichever chicken part you decide to go with, please use bone-in and skin-on.

Since this Keto chicken fricassee packs loads of flavor, it is best to pair it with a plain side. Traditionally, this dish is served with white rice, mashed potatoes, or buttered noodles. Step 1
Preheat the oven to 400F/200 C. Chop the onions, slice the carrot and mushrooms, and mince the garlic. Season the chicken with ½ tsp salt and ¼ tsp black pepper.Step 2
Place a heavy skillet over high heat and add the oil. Add the chicken drumsticks. Brown for 7 minutes, flip and brown the other side for 5 more minutes. Transfer to a plate.Step 3
Add the butter to the skillet. Add the onions, carrots, and mushrooms. Cook for 5-7 minutes, or until the mushrooms are golden.Step 4
Add the garlic and cook for 1 minute or until fragrant. Add the wine, chicken broth, and pearl onions and stir. Scrape off all the bits from the bottom of the pan.Step 5
Return the chicken to the skillet (skin side up for the thighs). Bake for 20-25 minutes or until the chicken is cooked all the way through. Take the skillet out of the oven and place it over medium heat.Step 6
Transfer the chicken to a plate. Mix in the heavy cream and xanthan gum, mix and simmer the sauce for 5 minutes. Add the lemon juice and parsley, and stir.Step 7
Taste the sauce and season if needed. Return the chicken to the pan and garnish with more chopped parsley. Serve immediately!

This recipe was delish! I did make some changes. Only had thighs so used 4. Added 1 stalk of celery. Omitted the 1/2 of the small onion. I ended up using fresh pearl onions because I did not read the recipe closely. Added them with the other veggies and they cooked enough. I also used only a cup of broth instead of 1.5 cups. So good.

Definitely a keeper!!! Just a little salty for me. I’m going to package into dinners or lunch!! In the freezer they will go!!!
