Keto Portabella Salami Swiss Rollups

A thick strip of portabella mushroom cap adds so much flavor on its own in this snack - no seasoning needed! Layers of melted swiss cheese and deli-sliced salami add natural salt and fats to the center, tenderizing the mushroom as well. This is a satisfying hot finger-food!

Ingredients

  • Salami

    4 medium slice - 3 1/8" diameter x 1/16" - each 0.4 ounce

  • Swiss Cheese

    Swiss Cheese

    4 slice- each 3/4 ounce

  • Portabella Mushrooms, Raw

    Portabella Mushrooms, Raw

  • Step 1

    Preheat an oven to 375 degrees. On a sheet tray lined with parchment paper, arrange 2 slices of salami per serving. Lay a slice of swiss cheese over each salami slice. Then, arrange a ½-oz strip of portabella mushroom at the base of each cheese slice.

    Bake the tray for 4-5 minutes, until you see the cheese melt and the edges of salami start to turn golden.

    Let the tray cool for 60-90 seconds before using a spatula to roll each salami slice over the mushroom strip up into a roll.

    Deeelicious - Though I substitutes Coppa (shoulder) for the salami and Gruyeres for the slightly less flavorful Swiss Cheese (Emmentaler). It was such a party in my mouth that it paid for the Carb Manager subscription for the year!
