Ingredients
Cauliflower Rice
3 cup
Lemon Juice
2 teaspoon
Smoked Salmon
1-¾ ounce
Garlic
1 clove
White Onion
1 tablespoon, chopped
Lemon Peel Or Zest Raw
1 tsp
Creme Fraiche
1 tablespoon
Chives, Raw
1 tablespoon
Vegetable Broth, Bouillon Or Consomme
1 cup
Butter, Unsalted
1 tablespoon
Parmesan Cheese
1 tablespoon, grated

Step 1
Crush the garlic and finely chop the onion. Melt the butter in a skillet over a low/medium heat and add the garlic and onion, sweating gently until tender.Step 2
Add the cauliflower rice, lemon juice and zest. Stir well to combine.Step 3
Add the stock and bring to a simmer. Simmer for 5-6 minutes until all the liquid has evaporated and the rice is hot through.Step 4
Roughly flake the salmon and finely chop the chives. Add to the skillet along with the creme fraiche and parmesan and stir through the rice to serve.

I need to find a better riced cauliflower, but I liked this one. I think I'll add mushrooms next time. Needed something to make me it more filling.
