  • Step 1

    Cut your chicken thighs into chunky pieces - about 10. Toss them in a skillet with all the seasonings and the olive oil. Cook on a medium high heat until the chicken is golden brown on all sides.

    Reduce the heat to a medium and stir in the diced tomatoes with chilis (liquid drained). Cook and toss until the excess moisture evaporates and the chilis start to turn golden.

    Next, stir in the cream. When the cream has come to a simmer, stir in the mexican cheese. Reduce the heat to low and stir until the cheese melts and the sauce thickens around the chicken.

    Serve the skillet chicken and sauce with chopped cilantro as a garnish at your discretion.

    Very tasty! Made as recipe with a little more cayenne because husband likes spicy foods. Also added a small pepper but made four servings for leftovers for lunch.

      This was excellent. I didn’t have canned tomatoes with chilies in the pantry, so I used some salsa. Served it over the Spanish cauliflower rice recipe from this site and it was quite good. Threw a handful of spinach in at the end to wilt.

        This is the hands down favorite of my non-keto diners and one of my favorites too. It is one of the few recipes I cook as written. It is flavor packed even without onion and garlic.

          It means to not beat/ or whip it with a mixer or whisk into whipped cream. Use it as is out of the container.

        I delete the tomatoes for less carbs and no bell pepper. Very little cheese just to top when I eat it and omg delicious!

          Richly delicious. Hard not to eat it all. Added fresh jalapeño to the skillet and garnished with scallions and fresh cilantro. Perfect!

                  Can i freeze the drumsticks in the marinate before cooking? Not sure about the whipping cream

                  I didn't have chiles but fresh fine chopped green and yellow peppers and a few slices chopped zuccini, that's what i had...added a little chile powder and voila...Excellent!!! YUM 😋
