Low Carb Tofu and Spinach Stir Fry

This Keto Tofu and Spinach Stir Fry is completely vegan and extremely easy to make. You will want to add this to your list of tofu stir-fries! Firm tofu is sauteed until nicely browned. Then it is seasoned with sea salt and freshly minced garlic. Once the garlic is fragrant, fresh spinach leaves are added to the pan until wilted. The result is a protein-packed dish that is full of iron and calcium.

What kind of tofu should I use?

Please use firm tofu, which is easy to saute and has a higher protein content.

If you want to meal prep this dish ahead of time, the meal will last in an airtight container for up to five days.

What are other ways I can spice up this dish?

I love to add a small amount of sambal or sriracha to the finished dish. Another low-carb-friendly topping you can use is Chiu chow chili oil, a sauce made of roasted chili peppers.

  • Step 1

    Preheat a large nonstick skillet over medium-high heat. Once hot, add in 1 tablespoon of avocado oil. Add in tofu which has been cut and thoroughly drained. Allow the tofu to sear on one side until browned, making sure to turn down the heat as necessary. Once brown, use a spatula to scrape under the tofu and allow it to brown on a second side.

    Add in the minced garlic.

    Then add in the fresh spinach and gently toss the mixture until it is wilted.

    Season the mixture with tamari. Taste and adjust, adding more sea salt as desired. Everyone’s salt threshold is different on a Keto or Low Carb diet! Serve on top of hot cauliflower rice. Feel free to top the final dish with sambal or sriracha.
