  • Garlic

    ½ medium - 2 1/2" diameter

  • Broccoli Florets

    Broccoli Florets

    ½ cups

  • Heavy Cream

    Heavy Cream

  • Step 1

    Roughly dice the onion and thinly slice the garlic. Melt the butter in a large saucepan or casserole dish over a low/medium heat. Add the onion and garlic and sweat gently until tender.

    Add the vegetable stock and bring to a boil. Add the broccoli and simmer for 2 minutes.

    Add the kale and simmer for a further 3-4 minutes until both the broccoli and kale are tender.

    Remove from the heat and stir through the cream.

    Transfer to a blender jug or use a stick blender to process the soup until smooth.

    Scatter with grated gruyere cheese to serve.

    Good base recipe, but like others, I added spices: salt & pepper, onion powder and garlic powder.

      Just made this and I feel healthier already haha I changed it a bit though. Used 2 heads of broccoli and like 4 cups kale. Added tumeric, cumin and ginger. Will be adding this to my soup rotation for sure!

        Having read feedback, I added a hot chilli pepper (scotch bonnet!) and some bacon for zing and added flavour. Also sour cream at serving instead of cheese. Beautiful 😋👩‍🍳😋

            Easy recipe, can see having it on hand and changing it up “when needed”, like with ham or sausage too. For me, it needed some seasoning, I just added Himalayan salt and pepper and it made a difference. It is thinner than what I think of as a cream soup. Any suggestions on what to use/ how to thicken it up more Keto style?

              You could try using Psyllium Husk, about 1-2 Tablespoon per 4 cup liquid. Psyllium husk is fiber so it will not affect keto negatively. Xanthum gum might help as well. Other supstitutes that may also affect consistency are Konjac or Agar Agar but are closer to gelatin feel.

              Great tasting soup and simple to make! I subbed the kale for fresh spinach as it has less carbs. It doesn’t grind up well with the immersion blender, so I would suggest fine chopping the spinach before adding it in towards the end.

                  I love this soup!!!! I added some ham I had leftover from a previous dinner but only added to the soup. I'll have to double the recipe next time; my kids won't leave it alone!
