Step 1
To a large bowl, add the room temperature cream cheese and butter. Beat using a hand mixer until the mixture is creamy. Set the bowl aside.Step 2
To another bowl, add the heavy cream. Whisk until it reaches stiff peaks. Add it to the cream cheese and butter mixture.Step 3
Add the powdered erythritol, lemon zest, and vanilla extract. Whisk until all the ingredients are incorporated. Line a mini cupcake pan/silicone mold with paper liners.Step 4
Divide the cheesecake mixture into the pan/mold. Add ½ tsp of blackberry jam on top of each one. Use a toothpick to swirl the jam into the cheesecake.Step 5
Freeze for 4-6 hours, or until the cheesecake bites set. Take the pan/mold and transfer the cheesecake bites to a plate. Serve immediately or store in an airtight container in the freezer.

Nice idea! Could imagine this would be wonderful for a birthday party or hen night treat. I used raspberries and put crushed almonds on the base as a very thin "crust".
