Paleo Instant Pot Garlic Herb Salmon and Sweet Potatoes and Greens

Salmon is one of the best proteins to include in your diet on a weekly basis. We recommend purchasing wild-caught salmon as it is high in Omega-3 fatty acids, fat-soluble vitamins, and trace elements; this is extremely valuable to a healthy diet. First, diced sweet potatoes are added to the Instant Pot. Then a rack is placed over the sweet potatoes for the salmon to rest on. The salmon is briefly cooked along with the sweet potatoes (we cut the potatoes into a small dice, so they cook simultaneously as the fish does). Then the fish is removed, and the sweet potatoes are mashed and incorporated with fresh spinach. We love a dish that is high in protein and potassium!

Do I have to purchase wild-caught salmon?

No, purchase the highest quality salmon you can afford. If this means that you can afford farm-raised salmon, you can substitute the salmon with this variety.

What if I do not want to cook my salmon and potatoes together?

If you are cautious about cooking salmon with sweet potatoes together so the potatoes do not have a fishy taste, you can cook the potatoes and fish separately. Cook both the sweet potatoes for 5 minutes on high pressure and the salmon for 2-3 minutes on high pressure.

    Wash and peel the sweet potatoes. Cut the sweet potatoes into a 1” dice. Keep the pieces around this size, or else they will not cook uniformly or within the cooking time listed here. Turn the Instant Pot on the Saute function. Wait until the pot says ‘HOT.’ Add the avocado oil and then the potatoes. Add in the water.

    Place the rack on top of the sweet potatoes. Place the fish on top. Season the fish on both sides with one teaspoon of salt, granulated garlic, and parsley. Place the lid on the pot and set the pressure on high for 5 minutes.

    Once the time has passed, do a quick release. Remove the salmon from the pot. Turn the Instant Pot onto the Saute setting again.

    Add the spinach to the potatoes and begin to mash the potatoes together with the spinach. Taste and season adding more salt as desired. Serve the mashed potatoes and greens with the cooked salmon.
