Step 1
Preheat your oven to 400F/200C. Slice the sausage links into ½ inch pieces. Slice the red onion and peppers, and cut the zucchini into ½ coins.Step 2
Spread the sausage pieces and veggies on the sheet pan. Drizzle the veggies with olive oil and sprinkle with crushed red pepper, paprika, garlic powder, salt, and pepper (trying to avoid the sausages). Transfer to the oven.Step 3
Bake for 10 minutes, flip the veggies and sausages, and bake for another 5-10 minutes. While the sheet pan is in the oven, prepare the dressing.Step 4
To a bowl, add the mayonnaise, pickle brine, red wine vinegar, Dijon mustard, and black pepper. Mince the garlic, finely chop the cilantro, and add them to the bowl. Whisk until well combined.Step 5
Add the dressing bowl to the baking sheet and serve. You can drizzle the dressing over the sausages and veggies or use it as a dipping sauce. Enjoy warm!

Great idea for a simple but tasty meal. The sauce was quite yummy and I made it exactly as the recipe reads. As for what you put on your sheet pan there's endless options with this versatile recipe. I used andouille sausage, mushrooms, red bell pepper, onion, yellow zucchini, fresh jalapeno and radishes (boiled first so they roasted like potatoes). Dumped all the veggies in a bowl with the oil and the spices and stirred it around before throwing on to the sheet pan and then the sausage. This is a much easier method than the one suggested in the recipe where you try to drizzle things onto the veggies while avoiding the sausages. That just seems silly. Finally, I cooked at least twice as long as suggested so there was time to draw all of the juice out of the veggies and get a real roasted feel to it.
