Pizza lovers unite! You would never guess this pizza roll is made with keto, gluten-free dough. Each bite is chewy, a little flaky, buttery, and gushing with marinara, cheese, and pepperoni slices. Kids and adults can enjoy this treat. You may also use this recipe in your meal prepping!

Step 1
Preheat an oven to 350 degrees and line a sheet tray with parchment paper. For this step, please have 1 full recipe of Carb Manager Fathead Dough prepared and COLD.Step 2
Place your fathead dough between 2 pieces of parchment or wax paper, and roll the dough out into a ¼-inch thick oval or rectangle. It does not have to have perfect edges, like pictured. Peel back the parchment paper occasionally while rolling it out to avoid creating holes in your dough.Step 3
Spread the marinara sauce across the dough, leaving ½-inch to 1-inch space around the edges. Sprinkle the oregano over the marinara and arrange the pepperoni.Step 4
Arrange the spinach on top of the pepperoni and sprinkle the first amount of mozzarella over the spinach.Step 5
Work carefully to roll up the pizza roll. Use the parchment paper to lift the dough and delicately roll it with your fingers, smoothing out any holes along the way. You can roll the dough a little loosely to avoid ripping holes. Once rolled, transfer the roll to your sheet tray with the seam facing down. Melt the butter and brush it over the top of the roll.Step 6
Bake the roll for 30 minutes. Then, sprinkle the final amount of mozzarella cheese across the top (this is also a great way to seal any holes that may have appeared during baking). Bake for an additional 5 minutes to melt the cheese.Step 7
Allow the roll to cool for 5 minutes. Then, slice the roll into 4 thick slices. To make this a lighter accompaniment to a main meal, you may slice the roll into 6-8 pieces. Enjoy!
