There are a couple of factors responsible for the cookies’ perfect texture and flavor:

Melted Butter

Erythritol Granulated
0.25 cup
Sugar Replacement, Brown Sugar

Step 1
Preheat your oven to 350 F/ 180 C. Line a baking sheet with baking paper and set it aside. To a bowl, add the melted butter, white and brown sweeteners, egg, and vanilla extract.Step 2
Whisk the wet ingredients until combined. To the same bowl, add the almond flour, baking powder, gelatin powder, and a pinch of salt. Mix using a spatula until a wet dough forms.Step 3
Add the chocolate chips and fold them in. Cover the bowl with plastic wrap. Refrigerate the dough for 15 minutes to firm up.Step 4
Take the dough out of the fridge, and portion it into 8 balls using a cookie scoop. Place them onto the prepared baking sheet and transfer them to the oven.Step 5

Did some search sleuthing and I’m going to go with Yes. Unflavored gelatin powders should work. Best to use grass fed but I don’t have that on hand.

I did a search and found a paleo hacks blog that lists a bunch of nut flour substitutes for people with allergies. They are probably high in carbs though. Here’s what was mentioned: tiger nut flour, cassava root flour, green banana flour, breadfruit flour, plantain flour, pumpkin flour, and sweet potato flour.
