The Best Keto Chocolate Chip Cookies Ever

Let’s be honest; there is nothing better than a Keto cookie that is crispy on the outside, soft and chewy in the middle, and full of chocolate chips. While there may be many easy Keto recipes for cookies on the internet, nothing beats this Keto chocolate chip cookie recipe.

This recipe is easy to prepare and requires only a handful of ingredients, making it a great Keto-friendly version of traditional chocolate chip cookies. Whether you enjoy it with your morning coffee or as a midday snack with a scoop of Keto vanilla ice cream, rest assured that it is still one of the best Keto recipes for cookies you’ll ever try.

There are a couple of factors responsible for the cookies’ perfect texture and flavor:

1. Use melted butter instead of room temperature butter—melted butter yields soft and chewy cookies.

2. Adding a little bit of beef gelatin powder might sound weird, but trust us, it works. Gelatin helps bind the cookie and adds a slightly chewy texture. Skipping the gelatin will make the cookie fall apart.

3. Don’t overbake the cookies. Take the baking sheet out of the oven as soon as the edges turn golden. Otherwise, your cookies will become cakey.

Is this recipe gluten-free?

Yes, it is! These cookies are made using almond flour, which is naturally gluten-free. None of the other components contain wheat or gluten, but it is always better to read the labels of the ingredients you’re using to stay safe.

How long can you store these cookies for?

These cookies will maintain their freshness for a couple of days. Store them in an airtight container at room temperature for up to 3 days or in your fridge for 7 days. You can also portion the cookie dough into balls and freeze them individually.

Substitute for the beef gelatin powder? Can I use just plain gelatin from Knox or something?

Knox is beef gelatin. Check the box.

Did some search sleuthing and I’m going to go with Yes. Unflavored gelatin powders should work. Best to use grass fed but I don’t have that on hand.

I did a search and found a paleo hacks blog that lists a bunch of nut flour substitutes for people with allergies. They are probably high in carbs though. Here’s what was mentioned: tiger nut flour, cassava root flour, green banana flour, breadfruit flour, plantain flour, pumpkin flour, and sweet potato flour.
