Step 1
Dice the onions, slice the mushrooms, thinly slice the garlic, and cut the cherry tomatoes into quarters. Add the oil to a pot and place over medium heat. Add the onions and sauté for 3-4 minutes until softened.Step 2
Add the mushrooms, garlic, and tomatoes and cook for 5 more minutes. Add the chicken stock, lemon juice, salt, and pepper. Bring to a boil, then drop the heat to low and simmer for 15 minutes.Step 3
Shred the chicken and roughly chop the spinach. Add them to the pot and allow to simmer for 2 more minutes. Take the pot off the heat, taste the soup, and adjust the seasoning if needed.Step 4
Portion the soup into 4 bowls. Garnish with hemp seeds and a lemon slice. Serve warm!

Broth was an especially huge hit with the spouse. There were slight modifications made - doubled the mushroom, tomatoes, and lemon juice. The chicken I sliced thin horizontally and then into strips. Great soup, would make again.
