  • Step 1

    Preheat the oven to 400 degrees Fahrenheit.
  • Step 2

    Slice the zucchini in half lengthwise and carefully score a criss-cross pattern into the flesh of each zucchini half.

    Crush the garlic and sprinkle over the zucchini halves along with the parmesan, salt and pepper. Use your hands to rub the garlic and seasonings into the scored zucchini flesh.

    Wrap two strips of bacon tightly around each zucchini half.

    Arrange the zucchini on a shallow oven tray and drizzle with the oil. Transfer to the oven for 20-25 minutes to bake or until the zucchini is tender and the bacon is golden and cooked through.

    i used a airfryer...alot of the fat drains off... do i need to change nutrient values?

      I did omit the olive oil and reduced the salt and they were still fantastic!

        I used less salt since it already has bacon and parmesan. Tasted ok, filling for light lunch or snack. Will try some crushed pepper or other spices next time. Easy to follow if new on Keto like me.
