Keto Pork Larb
This keto recipe is a take on the traditional Thai dish. The pork is fried with aromatic herbs and spices and tossed with zesty lime to serve.

Ingredients
Ground Pork
1 pound
Red Onion
1 tablespoon, chopped
Garlic
1 clove
Ginger Root, Raw
1 slice - 1" diameter
Lime
½ each - 2" diameter
Hot Chili Peppers, Red, Raw
½ each - approx 4" - 6" long
Scallions
2 medium - 4 1/8" long
Peppermint, Fresh
¼ cup
Cilantro
¼ cup, chopped
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon
Extra Virgin Olive Oil

Step 1
Heat the olive oil in a large pan over a medium heat and add the ground pork. Fry the meat until browned all over.Step 2
Finely slice the chili and mince the garlic and the ginger. Add the chili, onion, ginger and garlic to the pan along with the pork. Stir well to combine, cooking until fragrant. About 1-2 minutes.Step 3
Remove the pan from the heat once the pork is completely cooked through. Finely slice the scallions and add to the pan along with the juice and the zest of the lime, coriander and the mint. Stir well to combine and serve immediately.

Love this. For a little more authentic taste, I added a couple teaspoons of fish sauce in the dressing. (Not necessary, but I love the tart/salty flavor)
