Keto Honey Garlic Butter Chicken Thighs with Broccoli

27 ratings

These Keto chicken thighs are coated in a crispy, sweet glaze of honey and garlic butter. The chicken is baked over a bed of seasoned broccoli, so even your veggies are packed with flavor. A squeeze of lemon balances out the honey and garlic, but you can serve your meal with extra wedges of lemon as a garnish! This Keto chicken dinner recipe is a real crowd-pleaser, perfect for families. Why not try serving this low carb chicken recipe with a side of Keto cauliflower rice or a medley of roasted low carb vegetables?

Is Honey Keto?

Honey can be a delicious and nutritious natural sweetener. However, in large quantities, it contains too much sugar to be considered Keto. Used very sparingly however you can include a little honey on occasion to just bring a hint of sweetness to your Keto recipes. This recipe uses just 1 teaspoon of honey across four servings. This provides enough to flavor the marinade without overloading the carbs. If you would prefer an alternative sweetener, you may use a sugar-free honey or maple syrup substitute, but it may not caramelize as well when cooked. Be sure to adjust your macros for any changes made.

Serving Suggestions

This versatile Keto dinner recipe is perfect for families and great for both Keto and non-Keto diners. We love our Keto honey garlic butter thighs over a bed of cauliflower rice, drizzled with the delicious pan juices. Equally, this could be served with regular rice for non-Keto family members. Be sure to account for your chosen side dishes as part of your macros.

Note

This recipe calls for thawed frozen broccoli. This is best prepared in advance.

Recipe Steps

1 h 2 min

  • Step 1

Preheat the oven to 375 degrees Fahrenheit. In a large bowl, toss together the thawed broccoli, the olive oil, first amounts of salt and pepper, Italian seasoning, and paprika. Arrange the broccoli on a sheet tray lined with aluminum foil, leaving 4 spaces for your chicken thighs in the next step.
    Step 1
  • Step 2

Arrange the 4 chicken thighs in amongst the broccoli on the sheet tray. Sprinkle the second amounts of salt and pepper, and the onion powder evenly over the tops of the chicken thighs. Please feel free to adjust the seasonings to suit your own personal tastes. Please adjust your macros for any changes made.
    Step 2
  • Step 3

Melt the butter in a small heat proof bowl. You can do this over the stove in a double boiler or in the microwave. Add the honey, garlic, and lemon juice to the bowl with the melted butter. Stir everything together until smooth and well combined.
    Step 3
  • Step 4

Using a marinade brush, brush most of the honey garlic butter mixture (reserving 1 tablespoon) all over the exposed chicken thighs. Make sure to cover the chicken evenly in the marinade, coating both the meat and skin. Reserve the remaining tablespoon of honey garlic butter aside for later.
    Step 4
  • Step 5

Transfer the tray to the oven and bake for 50 minutes. Halfway through the cooking time, brush the reserved honey garlic butter over the chicken thighs, then return to the oven to finish cooking. This additional coating of marinade is what creates a layer of crispy, sweet chicken skin.
    Step 5
  • Step 6

Divide the cooked chicken and broccoli between four serving plates, serving each chicken thigh with a portion of broccoli. If any juices collected in your tray, make sure to drizzle it all over your hot chicken thighs! Serve hot with your favorite Keto sides.

Delicious and easy to make. One comment, I think there's a mistake in the portion calculation and one serving should be 2 thighs, not just one.

I liked the chicken but the broccoli turned to mush.

Dull down version of rotisserie chicken. Needs more flavor.

Really good! Chicken was juicy and the roasted broccoli and carrots I had with it were very tasty as well. I’ll be making again for sure!

I’m new to Keto so I’m still a little confused- since the serving weight for this dish is 219g, do I cook the food and then weigh it out on a scale? How do you ensure you are eating the exact amount in the recipe serving? Thanks

If you substitute sugar free syrup for the honey cuts back on the sugar and tastes great.

I agree with the calories. Too high when you do the math. Otherwise very yummy! Half serving makes more sense calorie wise.

This recipe is delicious but why is the caloric count so high?

I believe the amount of chicken is off...the recipe has 2 lbs of chicken thighs...that's way more than 1 thigh per serving...this would get you up in calories quickly. I will modify this to reflect a more accurate number on my food list.

I still think it seems high. The recipe calls for 1 Tbsp of butter and honey, roughly 200 calories and then the oil is another 200, spread over 4 servings. Still delicious though. Especially the broccoli!

I'd rather have natural honey which is not processed than any of the fake sugars approved for keto. Cane sugar is natural and from a plant. Why are the ones approved for keto better than totally unprocessed local honey?

Keto-approved sweeteners are typically significantly sweeter than natural sugar, so you don't need to use as much. Sugar (natural or substitute) contribute to carbs, so most try to avoid natural sugars. The reality is any sugar intake on the keto diet should be limited to only once in a while. Hope this helps!

One teaspoon of honey to 2 pounds of chicken can still be keto.. just think of it as low carb. Or use any sweetener and get honey extract if you are that sensitive. I’ve lost over 70 pounds doing Atkins and Keto and this amount of honey doesn’t scare me away from this recipe.

I agree completely, there is nothing wrong with one teaspoon of natural honey in 2 pounds of meat

I'm frankly surprised at the number of "keto" recipes on this site that call for honey. Personally I'd rather not see them - resisting the temptation is hard enough as it is!
