Low Carb Hot Coconut Breakfast Porridge

243 ratings

This unique Keto breakfast recipe puts a twist on porridge. If you’ve never had porridge before, think of it as a mix between oatmeal and thick pudding. It’s a hot breakfast that will really fill you up. Despite some ingredient changes to make porridge more Keto-friendly, you’ll find comfort in a hot, thick, hearty meal. Porridge is particularly great to have on especially cold mornings, but there are many other good times to eat porridge. If you exercise while on the Keto diet, this easy porridge recipe is great for eating beforehand. The low carbs will give your body some easy calories to burn. Any breakfast, really, will be better with this recipe!

What is porridge?

Oatmeal, grits, porridge, hot cereal: there are all types of thick, hot breakfast dishes that all seem so similar. Porridge is traditionally made with ground oats or rice. It’s the addition of milk or hot water that turns it into the creamy mixture that is porridge. For your Keto porridge recipe, you’ll be making it with ground flax seeds and coconut flour.

Porridge toppings

This recipe is topped with coconut milk and blueberries. For a more savory topping, try drizzling cashew cream or sprinkling sliced almonds over the top. If you really like coconut, unsweetened coconut flakes also make a scrumptious porridge topping.

I don’t like coconut

You can substitute coconut flour in this recipe with almond flour. Skip the coconut milk, and stir warm almond milk into your porridge instead! Add any other toppings that you’d like at your discretion.

Love this, eat for breakfast everyday. I added 1 tsp monk sweetener and dash of cinnamon. After cooking this for a while, a realized the egg really needs to cook. I mix the dry ingredients, then add water, add the whisked egg, then turn the heat on. Stir well and add vanilla. I let the mixture sit, stir infrequently. After about 2-3 min you’ll see the egg puff up, this adds volume to the mixture. Top with butter, coconut milk, cinnamon and blueberries.

Loved this recipe. Don’t know why so many reviewers are disliking the flavor, I thought it was slightly nutty and very good. I tried it with a little vanilla and then the second time with a little zero sugar maple syrup; preferred the maple syrup. Also added a Tbsp of heavy cream and a few blueberries. I suspect the thickness of the final product has a lot to do with how long one cooks the flax/coconut/water first step.

Wow this was spectacularly horrible. Maybe it was the brand of coconut flour I had, but the flour had an awful aftertaste that overpowered everything I tried to salvage the dish. I just realized I forgot the butter... but I don't think that would have helped. I added 2 eggs instead of just the 1 to help boost the protien and the thickness, 2 tsp monkfruit sweetener, 1 tsp cinnamon, 1 tbs almond butter and 1/4 tsp Danish pastry extract. And first taste the cinnamon and extract...I thought it may have worked, and then I was slammed with that weird uncooked coconut flour scent and flavor that just lingers...

Try using only whites, avoid the yolk & try adding a bit of stevia for taste

Made this today and not a fan. I didn't have flax so I added extra coconut flour. Probably why it didn't taste great. It was also very liquid. I'll try it again when I have flax. But so far, not my fave porridge.

This is a really good bowlful. I added stevia sugar vanilla extract and blueberries and it was pretty good. Ok it’s not porridge but it’s a good replacement for a hot breakfast when you can’t handle more fried eggs

I would not substitute chia seeds here, just not the same at all.

I made this in the microwave and it was still good, although a little soupy. Not sure if it would be thicker on the stovetop but I’m not going to dirty a sauce pan for one serving lol! I think all I need to do is reduce the water and it will be perfect.

Add a pinch of real salt, cinnamon, and a dash of vanilla extract. It seems like a very bland recipe.

Almond flour doesn’t absorb water like coconut flour does- but oat FIBER (not flour!) does. It also lends the flavor of oats. I’m not a fan of coconut flour, and oat fiber has become my go-to substitute for it in keto recipes. It worked well in this one and made a nice porridge consistency. I also substituted heavy whipping cream for the coconut milk.

Thanks for the tip — I’ve been adding oat fiber to some other things but would not have thought to sub it for the coconut flour — and save some carbs as well. In fact — if you use Anthony’s Organic Brown Flax
