  • Step 1

    Heat the coconut oil in a skillet over a low/medium heat. Crush the garlic and add to the pan, sweating gently until tender. Add the cauliflower rice and stir well to combine.

    Add the coconut milk, lime juice, zest, salt and pepper. Stir well and bring to a simmer for 4-5 minutes until all the coconut milk has been absorbed.

    Transfer the rice to a serving dish and separate the grains with a fork. Thinly slice the scallions and roughly chop the cilantro. Stir through the coconut rice.

    Scatter with the sesame seeds and coconut flakes to serve.

    One of my favourite cauliflower rices to make. A lot of carbs tho for one serving but other than that, I paired it with the keto rogan josh recipe. Divine combination

      serving size seems to be off a bit. Says serves two at 45.4 grams per serving but the cauliflower rice alone is 248 grams. that makes 2 servings 114 grams each. Regardless, this was delicious and will definitely make again

        Pretty easy and tasty. Will make again to have on hand for easy lunches.

          Super tasty! I really liked this side. The serving size is very underwhelming. Got to plan my day different tomorrow.
