  • Step 1

    Preheat the oven to 390 degrees Fahrenheit and lay a large piece of foil across a shallow oven tray.

    Add the cream cheese, half the lemon zest, the spinach, crushed garlic and basil to a mixing bowl.

    Season generously and stir well to combine.

    Lay the chicken breasts on a clean work surface and use a sharp knife to score down the center of each breast, making a pocket in the center.

    Spoon the mixture evenly between each chicken breast, filling the pocket completely.

    Season each chicken breast with salt and pepper and the remaining zest.

    Lay the chicken breasts on the foil and drizzle with the lemon juice. Fold the excess foil over and around the chicken forming a loose parcel.

    Transfer to the oven to bake for 23-25 minutes, until the chicken is cooked through.

    Hey so one serving would be 1 chicken breast. 1/2 serving would be half of the chicken breast 😊

      It says 2 servings per breast as you move down into the recipe itself so 1/2 a breast is 1 serving. I think they just labeled it funny saying 1/2 serving.

    Can someone help me please? What should I set at servings? And what does it mean 1/2 etc? How should I set for 1 portion only? I'm confused a bit as is my first time using this app

      I would personally just do 1 chicken breast as a serving. To make it simple. Just grab a couple chicken breasts that are the same size as per the serving amount.

            Very tasty but definitely recommend doubling the garlic and maybe lemon for more flavor. I also 2nd the previous recommendation to bake “standing up” or else the filling will likely run out. I used some additional foil to “support” the chicken’s upright position in a shallow baking pan but if you have a tall enough casserole dish, that would likely work as well. Finally, since we used Costco chicken breasts (and made 4 at once), ours ended up taking nearly 45 mins at 425. I also covered in foil for the first 20 mins then removed to get some color and texture on the top. Will likely make again.

              Tastes way better than it looks and is easy to add other spices to your taste. My chicken breasts were thin, so I had to hold the chicken breasts together with toothpicks before baking. I’ll definitely make again.

                I absolutely loved this! I substituted spinach with Asparagus heads, and baked the Asparagus stems on the side with the Chicken with some crushed garlic. I used Lime juice because I didn't have lemons, still amazing!

                      Another suggestion .... Sweet Chilli Cream Cheese plus diced sweet red peppers, spinach, lime instead of lemon .... Add a fresh chopped chilli if you love heat. Just before finished baking, open up foil, sprinkle some grated hard cheese over and allow to brown in oven for a few minutes. Serve with cherry tomatoes that you can have fresh or baked in the same oven.

                      Great recipe. Instead of just mixing in a bowl for the first step used a hand mix and made a creamcheese style pesto.
