Hayashi rice is the Japanese version of a hearty beef stew with its name derived from the British dish “hashed beef.” It is typically served over steamed rice; this is why people started calling it Hayashi rice. Slices of beef are stewed with onions and mushrooms in an umami sauce filled with Japanese condiments. It’s a classic comfort food that’s become a favorite among kids and grownups alike.
Is Hayashi rice Keto-friendly?
Most of the ingredients used to prepare traditional Hayashi rice are low in carbs and suitable for a Keto diet. However, a couple of ingredients like sugar and ketchup can be easily substituted by erythritol and sugar-free ketchup.
What is the secret to a rich and flavorful Hayashi rice?
• Brown the beef on all sides. The caramelized bits at the bottom of the skillet deepen and enrich the sauce’s flavor. • Don’t skip thickening the sauce with xanthan gum. A big part of this stew is its sauce. It carries all the great flavors of wine, meat, vegetables, and condiments. Omitting it will yield a runny sauce. If you don’t have this ingredient, you can use arrowroot powder, but that will add more carbs to your portion.

Step 1
Thinly slice the beef and season with salt and pepper. Slice the mushrooms and onions, and mince the garlic. Keep these ingredients on standby.Step 2
Heat a large heavy-bottomed pot over medium-high heat and add 1 tbsp of butter. Add the mushrooms and sauté for 7-10 minutes until golden. Transfer to a plate.Step 3
Add the oil to the pot and raise the heat to high. Add the beef and let cook without stirring for 3-4 minutes until browned. Flip and brown the other side for 3-4 minutes. Transfer to a separate plate.Step 4
Drop the heat to medium and add the remaining butter. Once melted, add the onions and sauté for 4 minutes until softened. Add the garlic and cook for 1 minute.Step 5
Add the wine, beef broth, tomato paste, Worcestershire sauce, soy sauce, ketchup, erythritol, salt, and pepper. Stir and scrape the bottom to release the burned bits. Return the beef to the pot and bring the stew to a simmer.Step 6
Turn down the heat to low, cover the pot with a lid, and allow this to simmer for 2 hours until the beef can be easily flaked with a fork. Once the meat is cooked, return the mushrooms to the pot and stir.Step 7
Taste the stew and adjust the seasoning if needed. Mix in the xanthan gum and allow to simmer for 2-3 minutes until thick. Let the stew cool for 10 minutes before serving.Step 8
This dish is best served with cauliflower rice. Scoop a portion of the stew in a bowl next to some cauliflower rice. Serve immediately.
