    Dice the onion, celery, red bell pepper, and tomato. Mince the garlic and thinly slice the chicken. Set them aside separately.

    Add the oil to a pot over medium-high heat. Once hot, add the chicken and spread it out into one layer. Season with 1 tbsp of Cajun seasoning and stir to combine.

    Very delicious. I didn't have fresh tomatoes on hand so I used 1 can of drained fire roasted tomatoes. Turned out perfect. Fast quick and easy.

      Extremely delicious! I made 7 bowls. I used my homemade bone broth which has some salt so I found that I did not need to use the full amount of creole seasoning.
