  • Step 1

    Melt the butter in a medium sized soup pot over medium-low heat. Peel (if necessary) and chop the shrimp into bite-sized pieces. Heat the shrimp in the butter until just cooked through - about 3-4 minutes.

    Mince the garlic and stir it into the pot. Stir in the salt, pepper, and tomato paste as well. Then, pour in the chicken broth.

    Cover the pot with a lid, and bring the soup to a strong simmer. Stir in the remaining ingredients.

    Allow the soup to simmer, uncovered, for about 10 minutes. Serve in two bowls or save a serving for another meal!

    I removed the shrimp after it was sauteed because it would be overcooked if I left it in the pot while doing all the other steps. I also added a 1/2 cup of peeled & diced tomatoes (4 carbs) to make it an authentic Puttanesca-style dish. It also doesn't need to cook for 10 minutes. I cooked mine until it boiled, removed it from the heat, and added the basil and lemon peel. It's an alright dish but nothing to write home about.

      I like the flavors in this, but I would say the salt isn't necessary. Between the olives, the capers, salted butter and the .5 tsp of salt, this soup will probably be overpoweringly salty for those on low sodium diets. Fortunately this time I paired it with a bland cauliflower gratin and it evened things out, but next time I will reduce the salt. The soup is also quite thin, so I may add some spinach or broccoli to make it more filling.

        However, if you used unsalted butter, low-sodium, or homemade chicken broth, you may just want to use the amount of salt listed. I always rinse my capers and olives before cooking, which removes most of the added salt. You could also season it after it is finished cooking.

        I will also note I didn't find this soup at all spicy. If you like heat, you'll need more red pepper.

        Yum! I was out of crushed red pepper so I used smoked Spanish paprika. I also added a handful of baby spinach and a tiny grating of Parmesan cheese.

          Made it as is except I was out of black olives. It was perfect, quick, easy and filling. Great go-to recipe to have on hand.

            It’s a great easy quick recipe! Next time I’ll add a little bit more red pepper and maybe even put a little few vegetables in maybe green beans or cauliflower just to give it some substance!

              OMG!!!!! This is so good!!! I love pasta puttanesca but since I can’t have pasta this soup is a perfect replacement.

                  This was excellent. I didn't really heed the warnings from others regarding the spiciness. I love spicy food, but my wife thought it was too spicy. So fair warning, if you don't like really spicy things, it may have too much heat for you.

                    Very yummy. So easy to put together. After reading other reviews I did not add any salt. I didn’t have fresh herbs on hand so I used all dry and because I used dry I added turmeric until I reached desired color. My family doesn’t like really spicy so I left the crushed red pepper out and it was still plenty spicy. Just the right amount. A soup that will be added to rotation.

                      After reading the reviews I decided to cut back on the peppers because I am not big on spicy food and added some spinach and asparagus only because the shelf life was nearing on them. I also do not like capers so instead of black olive I used kalamata olives which gives the saltiness that capers would have gave. Topped it with shaved parmesan cheese and BABY! This was some good soup! I couldn't eat one bowl. I gave it 4 stars only because I had to tweak some of the ingredients

                        Loved it...I did add 1 cup cauliflower rice. Spicy, but perfect for a cold and rainy day.

                            It is really good except a little too spicy for my taste. Not sure where I went wrong, but came out way too salty.

                              I also made this soup today and followed the recipe to the smallest detail. It came out so salty I had do dilute it with water so much otherwise my mouth would shrivel up.

                            Delicious. I will definitely make it again I made no modifications. It was a bit spicy for my husband but I thought it was perfect. I ate parm crisps on the side. Nice combo.

                                I really enjoyed this dish. I adjust the recipe and macros to accommodate the ingredients I had on hand. All in all, it is a very tasty soup, and more importantly it comes together quickly!
