Keto Jumbo Shrimp and Avocado Salad
This simple but refreshing salad is loaded with juicy jumbo shrimp, cooling cucumber, sweet red onion and creamy avocado, bound in a light yogurt and dill dressing.
This makes a great sharing side salad or filling for lettuce wraps.

Ingredients
Jumbo Cooked Shrimp by Wegmans
2-¾ ounce
Dannon All Natural Yogurt, Plain
1 tablespoon
Dill Weed, Fresh
1 tablespoon
Lemon Juice
½ tablespoon
Mayonnaise
½ tablespoon
Avocado
½ each
Red Onion
¼ medium - 2 1/2" diameter
Cucumber
⅓ large - 8 1/4" long
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Finely dice the cucumber and avocado and thinly slice the onion. Add to a serving bowl along with the cooked shrimp. Toss to combine.Step 2
Finely chop the dill and add to a mixing bowl with the yogurt, lemon juice, mayonnaise, salt and pepper. Whisk together until smooth.Step 3
Spoon the dressing over the shrimp and vegetables and stir well, coating the salad in the yogurt. Refrigerate until ready to serve.

I used lime juice instead of lemon, also very delicicious.

So easy and delicious! I added a wee bit of sriracha sauce for a little zing.
