Keto Chicken, Mozzarella, Olive and Tomato Wraps
This quick and easy keto lunch utilises cooked chicken slices in place of traditional carb heavy wraps.
The chicken wrap is filled with creamy mayo and shredded mozzarella, crisp lettuce, tangy olives and sundried tomatoes. Perfect for lunchboxes or afternoon snacking!

Ingredients
Chicken Lunchmeat, White Meat
4 slice
Pitted Kalamata Olives by Mezzetta
4 olives
Sundried Tomatoes
2 piece
Mayonnaise
1 tablespoon
Lettuce
⅓ cup, shredded
Mozzarella Cheese
⅓ cup, grated
Recipe Steps

Step 1
Divide the mayonnaise evenly between the chicken slices, spreading almost to the edges.Step 2
Shred the lettuce and divide between the chicken slices.Step 3
Divide the shredded mozzarella between the slices.Step 4
Finely chop the olives and tomatoes and divide between the wraps.Step 5
Fold the chicken wrap up around the filling to form a tight roll to serve.

I love this. I sometimes use the carb balance mission tortillas. I add some jalapeño pepper slices for a little kick.

I made these but I decided to wrap a larger leaf of lettuce around the whole thing to hold it all together. But this was real tasty.
