Keto Chicken Bacon Ranch Casserole
Bacon and ranch go hand-in-hand. They’re the perfect flavor combo that tastes salty, tangy, crunchy, and creamy. This chicken bacon ranch casserole puts a whole meal in one Keto dinner recipe. The first layer is mashed cauliflower thickened with butter and cream cheese. The next layer of the casserole is shredded chicken breast cooked with ranch flavors. A third layer of crispy bacon bits, fresh green onions, and melted cheddar is like the icing on the cake - except they’re the topping on the casserole! Slow Cooker Variation
Want to make your casserole preparation a little easier? You can cook the chicken breast in a slow cooker up to 8 hours in advance. Cook the chicken breast with its seasoning and olive oil in a slow cooker or Crock-Pot sprayed lightly with pan spray. Shred the chicken and layer your casserole when it’s time to throw everything in the oven!
Which Ranch Seasoning Should I Use?
There are two types of ranch flavoring you can use: ranch dressing powdered mix or ranch seasoning. Look out for unhealthy sugar substitutes, like maltodextrin in the ingredient lists. Step 1
Bring a large pot of water to a boil on the stove while you prepare a medium-sized head of cauliflower. Remove any green outer leaves and hard core, then cut the cauliflower into large pieces. Add the cauliflower to the boiling water, and cook it until it’s soft enough to pierce through the center with a fork. Transfer the cooked cauliflower to a food processor or good blender, and blend until smooth. Blend butter, cream cheese, salt, and pepper into the cauliflower until it resembles mashed potatoes.Step 2
Transfer the mashed cauliflower aside to cool while you make the chicken. Pat chicken breasts dry with a paper towel and rub the olive oil into the flesh. Season only one side of the breasts with the first amount of ranch dressing powder, followed by salt and pepper. Heat a large pan over high heat, and place the chicken in seasoned-side down. Cook the chicken on one side until the spices char, then flip the chicken over. Finish cooking the chicken while you flip the breasts back and forth in the caramelizing spices, adjusting the heat as necessary to avoid burning.Step 3
When the chicken is cooked through (at least 165 degrees internal temperature), transfer it to a clean bowl or dish. Use a pair of forks to pull the chicken apart into shreds. Season the chicken with the additional amount of ranch dressing powder, then set it aside. Spray a 7x5 baking dish with pan spray, and spread the mashed cauliflower across the bottom of it. Arrange the shredded chicken across the mashed cauliflower in a single layer.Step 4
Turn on your oven to preheat to 350 degrees. Quickly cook the bacon on your stovetop until it’s crispy. Then, chop the bacon into bits. Sprinkle the bacon bits over the top of the casserole, followed by chopped green onion and shredded cheddar cheese. Bake the casserole in your oven uncovered for 20 minutes or until done. The cheese should be melted and golden on top, and the edges of the casserole may have light browning.

I made this. Not bad, but for me it took a lot more than 45 minutes to put together and make. The shredding alone took me 15 minutes because the spices side of the chicken was hard as plastic. I see absolutely no reason to char the spices. Next time I will cook the chicken the way I normally do, browning it slightly then covering it to get it done. I also see no point in layering the chicken. I had to mix the chicken into the cauliflower on my plate because the chicken was so dry. So, I plan to modify this recipe significantly.

Good but was a little dry. I will make the mashed cauliflower with a little heavy cream next time and add more cheddar on top. Of course would have to adjust the macros from original recipe if I make these changes.
