Low Carb Salt and Pepper Shrimp

Salt and pepper shrimp is one of my go-to take out foods, however, it is very simple to make at home and it tastes better. Serve with cauliflower rice on the side and your favorite low carb vegetables. Use shell-on shrimp as the frying process allows the shell to crisp enough to eat.

  • Step 1

    Place shrimp in a medium-sized mixing bowl. Add the cornstarch and mix thoroughly. Allow to sit as you prep the other ingredients.

    Mince the garlic and slice the scallions into thin rounds. Slice the jalapeno into thin rounds as well. Heat a medium-sized nonstick saute pan until very hot over medium-high heat. Add in the avocado oil and enough shrimp to cover the pan in a single layer. Do not overlap the shrimp or they will steam and not get crispy. Cook for 1-2 minutes then flip shrimp to the other side and cook until they are pink. Remove to a paper towel lined plate. Repeat with the remaining shrimp. I did not have to add extra oil, but if you need to add a little more between batches feel free.

    Once all the shrimp are cooked, add 2 teaspoons of avocado oil to the hot pan and saute the scallions, garlic and jalapeno together briefly (less than a minute).

    Add back in the cooked shrimp and toss in the scallions, garlic, and jalapeno. Season with salt and pepper. Taste, adding more salt and pepper as you please. Serve hot with cauliflower rice!

    I did not use the cauliflower rice Instead of 7 g carbs what would be my carb amount

      No cornstarch for keto! I use glucomannan and it works great without that slimy feel.

        I did use the cornstarch this time but yeah it made my counts high and I had to skimp on food for the day to make it work. Next time I’m using coconut flour.

            I used coconut flour, worked well. Forgot to peel the shrimp though because they were veined

                I agree. I was shocked when I saw it as well. But this recipe is a low carb recipe not a keto recipe

              I assume you remove the shell on shrimp before coating? And did you say Xanthum gum can be substituted for cornstarch....or is that what you meant would be slimy?

                Left over shrimp are even good cold. I used almond flour instead cornstarch

                  Can you use potato starch or Xanthan gum instead of corn starch?

                    Yes, potato starch would work well! CS than will be slimy.

                  Loved this recipe. It is easy to make and shrimp was so flavorful. Served shrimp over mashed garlic and herb cauliflower.

                        in moderation it can be used, this is where your 7 carbs come from!! use coconut flour or almond flour go suit your needs!
