    Add the green beans to a pan of boiling water and simmer for 4-5 minutes until just tender.

    Melt the butter in a skillet over a medium heat. Thinly slice the garlic and add to the pan, sweating gently until tender. Add the green beans and toss in the butter. Sauté for a minute or two until hot through.

    Remove the pan from the heat and roughly chop the herbs. Add to the pan and toss to combine.

    Great recipe full of flavour with addition of mint! I just don’t seem to have enough beans on my plate! Your pic seems to show more beans than what I weighed. I would have thought two portions not three

      No need to par boil beans. You boil out the nutrients. Simply add butter and a bit of olive oil to pan, put a lid on. Pan fry until desired crispness.

        Refreshing flavor and the mint really surprised me. I have made this four or five time and plan to keep it as a staple in my rotation.
