Low Carb Three Cheese Quiche
This deliciously indulgent low carb quiche is filled with 3 different cheeses in a creamy custard and encased in a crisp pastry.
The perfect weekend lunch, this quiche is perfect served chilled with a mixed salad or some steamed green vegetables.

Ingredients
Egg
4 medium
Finely Ground Almond Meal Flour by Bob's Red Mill
1-¾ cup
Grated Cheese
1 cup
Coconut Oil
1 tablespoon
Garlic
1 clove
Olive Oil
1 tablespoon
Gruyere Cheese
¾ cup
Double Cream
½ cup
Mozzarella Cheese
½ cup, shredded
Red Onions
½ medium
Ground Flax Seeds
1 x 1/4 cup
Salt
⅜ teaspoon
Black Pepper
⅛ tsp

Step 1
Preheat the oven to 390 degrees Fahrenheit.Step 2
Add the ground almonds, flax and coconut oil to a food processor. Pulse to combine and form a crumb.Step 3
Season the flour mix with salt and pepper and add 1 egg to the food processor. Blend slowly until the mixture comes together as dough.Step 4
Press the dough evenly into a loose bottomed tart tin – approximately 18cm, and place in the oven to bake for 10 minutes. Remove and leave to cool.Step 5
While the pastry is baking, you can make the filling. Heat the oil in a frying pan over a low medium heat. Slice the onions and garlic and add to the hot pan, frying gently until softened – about 4 minutes.Step 6
Once cooked, arrange the onion and garlic in the cooked pastry and reduce the oven temperature to 360 degrees.Step 7
Add the cream and the remaining eggs to a mixing bowl, season and whisk together.Step 8
Add the grated cheddar, gruyere and mozzarella to the cream mixture and stir through well to combine.Step 9
Pour the cheese mixture into the pastry case over the onions and garlic.Step 10
Place in the oven and bake for 30 – 35 minutes until cooked through and golden brown on top. Leave to cool before removing from the tin.

I did this crustless, it is really tasty. I suppose you could try it with looks instead. Very easy to do especially with out the crust :)

I havent made this "yet" but I prob will but I would make it without the crust at all, Thats what I have done with other recipes for quiche

Same. I just don't like coconut oil and I am laaaaazy. But adding some flaxseed at the bottom will make this very healthy.

Couldn’t you add broccoli and maybe peppers to add a different twist on this? Does it need the onion for a more robust flavor or can that be held off for non onion eaters?

Did 1 1/4 too of flaxseed :( It explains why I was having so many issues with the crust and why I had such a reaction from my body but otherwise it tasted great. I am looking forward to doing it again with the proper measurements and potentially without the flaxseed.

So in the UK we say "ground almonds" where in the US it tends to be referred to as "almond flour". Technically, almond meal doesn't tend to be quite as finely ground as flour but it will do pretty much as well in a recipe :)

It says ground almond meal flour. I think almond flour would be fine. I've used it in other recipes that call for ground almond meal flour, and it turned out great.

Great recipe. Delicious. It would make it easier if the ingredients were listed in the order they are required in the recipe... eg. crushed flax seed is near the end of the list. Just makes it easier to think through. Also please clarify the amounts, eg... flax seed needs to be listed as 1/4 cup, not 1 x 1/4 cup which is confusing. I added bacon and spinach and it turned out really yummy.

18 cm? Well that’s about 7 inches around. Spread out your fingers and that’s about the size of this quiche. Six servings may be a real stretch for most people.

Copy the recipe to My Foods. Delete the ingredients for the crust. That will give you the nutritional information for the crustless version.
