  • Step 1

    Use a vegetable peeler to strip a whole cucumber down into 12 strips (6 strips per serving). Choose strips that are solid and even in shape. Arrange the strips in pairs of two, one slightly overlapping the other, making 6 portions total (3 portions per serving). Use paper towels to press into the cucumber strips and soak up all excess moisture.

    Microwave the cream cheese for about 15 seconds so it is smooth and pliable. Spread approx. 1 teaspoon of cream cheese across each portion of cucumber strips. Follow with laying pieces of lox over the cream cheese - ⅓ oz lox per portion of strips.

    Roll each portion of cucumber up into a sushi-like roll. Sprinkle the "Everything" seasoning over the tops of the rolls for serving.

    I haven't tried it yet but it looks good and I'll make it. To save myself the aggravation of the thin strips, I'd simply cut thick coins from the cukes; just melon ball out a bit of the center (not all the way through). Then add the cream cheese, lox, and seasonings. Looking forward to trying it.

        Mandoline slicer is the way to go for easy thin slices. Be careful though if misused a Mandoline can be dangerous.

      What delightful looking snack/ appetizer! A few issues: it’s a hilarious amount of work for just a few bites- more like a food art project- don’t make this while hungry! Would be great for a fancy dinner appetizer though. Also- seemed like the cream cheese to cucumber ratio was off- kind of a mushy texture with too much cream cheese. If making again, I’d make way more cucumber rolls with a teeny amount of cream cheese in each. Or even better, transform it into half cucumber boats with the insides scooped out, with the cream cheese, smoked salmon, and capers on top (fancy ants on a log). 💁‍♀️

        Great alternative method for this recipe! Especially if not making them for serving and just for eating. Though obviously both methods can be made to look and taste amazing.

        So simple, yet a lovely presentation and delicious enough you won’t miss the (sushi) rice! I also made with smoked trout which was equally as yummy.
