Keto Strawberries & Cream Granita

This Strawberries & Cream Granita will really hit the spot! The addition of sweetener and heavy cream makes for a creamy, tangy and slightly sweet cold treat. Be sure to start with frozen strawberries! It is key that the mixture starts very cold before going into the freezer, making for fewer ice crystals and therefore a creamier dessert. The prep time looks long, but you only need to stir the granita a couple of times one hour apart from each other.

Ingredients

  • Heavy Cream

  • Step 1

    Blend frozen strawberries with cream in a blender or food processor until smooth. Add the sweetener and blend again. Taste and add more sweetener if desired.

    Add mixture to an 8” x 8” pan and place in the freezer.

    In one hour, stir mixture completely incorporating the sides into the soft center. Place back into the freezer.

    In another hour, stir again repeating the same process. Freeze again until ready to consume! Allow mixture to warm up slightly before serving to make it easier to scoop!

    I only found swerve sugar in granular and powdered and confectioner. Which is it?

      Confectioners sugar is icing sugar

      I would use the powdered for icing so since the recipe calls for icing sugar i would use the powdered version
