Keto Bacon Wrapped Filet Mignon w Whipped Blue Cheese
Who can resist a tender filet mignon wrapped in crispy bacon? You don’t have to resist! However, the star of this show is the whipped blue cheese topping. It’s salty like a restaurant-style whipped butter, but it’s not as heavy. This main dish would pair excellently with a keto mashed potato or a simply cooked vegetable.

Step 1
Start by making the whipped blue cheese topping. In a stand mixer, whip the cream cheese until it is soft and fluffy. The softer it is, the more enjoyable your topping will be. Then, crumble the blue cheese and whip it into the cream cheese on a high speed.Step 2
Set the whipped blue cheese aside and wipe your mixing bowl relatively clean. Whip the heavy cream on high until it is a stiff whipped cream. Then, whip the blue cheese mixture back into the cream. Once these ingredients are whipped together, transfer it to your refrigerator to keep cool until later.Step 3
Prepare your filet mignon by wrapping each one in a raw strip of bacon. Then, sprinkle the seasonings over the exposed tops of each steak.Step 4
Heat the olive oil in a pan on a medium-high heat. Set the filet mignons seasoned side down in the hot oil. Cook until you have a great char - about 5 min. Then, use a pair of tongs to rotate the steaks on their sides to sear the strips of bacon to the steaks. If necessary, you can switch these two parts to keep the bacon from falling off your steak.Step 5
Once the bacon is seared, place the steaks on their final raw side to cook. Turn the heat down slightly and place a lid over the pan. Cook for an additional 5 minutes. At this point, you may cook longer, while rotating the steaks, to have a more well-done steak. However, a medium-rare is most enjoyable for this recipe!Step 6
Arrange approx. 2 ½ oz of whipped blue cheese on each plate for serving and add a finished steak to each one. You may use a pastry bag with a piping tip to give your plate a more upscale appeal, or you can simply dollop the whipped blue cheese onto your steak. This plate has been garnished with chopped parsley.
