Can I Bake These in The Air Fryer?
We have used the instant pot to keep this recipe simple and cooking methods minimal. However, these chicken thighs would also work well cooked in an air fryer or oven-baked until crisp and golden; simply coat the chicken with the spices and cook with a touch of oil. If you choose an alternative cooking method, please adjust your cooking times accordingly. As air frying and baking do not require the stock and tomato sauce, this can be used for simmering the rice until tender. Please be sure to adjust your macros to account for any changes made to the recipe.

Step 1
Add the chicken thighs to a large bowl. Add 1/2 teaspoon of smoked paprika, 1/2 teaspoon of cayenne pepper, 1/2 teaspoon of dried oregano, the onion powder, garlic powder, salt, and pepper. Use your hands to rub the spices and seasonings evenly all over the chicken thighs. You may adjust the quantity of spices, adding more or less to suit your personal taste.Step 2
Add the olive oil to the instant pot. Set to sauté. Once the oil is hot, place the chicken thighs in the pan skin side down. Leave the chicken to cook for 4-5 minutes on the first side until golden and crisp. Turn the chicken pieces over and cook on the second side for 4-5 minutes or until golden brown all over.Step 3
Add the chicken stock, tomato sauce, and remaining herbs and spices to the instant pot. You may use an alternative stock if preferred, such as vegetable. Stir gently to mix. Place the lid securely on the instant pot and ensure that it is set to sealing. Set the pressure to high and set the time for 15 minutes. After this time, quick release any remaining pressure.Step 4
Once safe to do so, remove the lid from the instant pot and check the chicken is completely cooked through. Add the cauliflower rice to the instant pot and set to sauté. Heat the rice through in the pan juices for 3-4 minutes or until tender. Divide the chicken and rice between 4 serving plates or bowls, accompanied by your preferred Keto sides.

The bones of this meal, ingredients are great. But using the insta pot and adding the cauliflower rice at the end was disgusting. The skin was mushy the and the cauliflower rice turned to complete mush. would be best to cook this in a frying pan, remove the chicken then saute the rice in its juices.

I will gladly be the first reviewer for this recipe…. If you like a little heat this is perfect! I love Cajun and this recipes was right on mark! LOVE LOVE LOvE Easy! Flavourful and filling! I doubled all ingredients to freeze some but I do t think I will. I’m sure I will eat it all!!! This will be a staple in my meals
