Keto Chicken and Broccoli with Olive Oil
This is a weeknight staple! It’s a simple recipe with only a few ingredients, but the garlic and olive oil help round out the dish very well. You can also use this recipe as a starting point and add in your favorite herbs and spices. While the recipe calls for chicken breasts which are very lean, the olive oil provides a great source of monounsaturated fats to make the dish more filling and satisfying.

Ingredients
Boneless Skinless Chicken Breast
¾ pound
Extra Virgin Olive Oil
6 tablespoon
Broccoli Florets by Bonipak
3 cup
Garlic
5 clove
Salt
½ teaspoon
Recipe Steps

Step 1
Place the chicken breasts between two pieces of parchment paper and pound with a mallet until they are uniform thickness. Cut the breasts into cubes about ¾-1” in size.Step 2
Heat 3 Tbsp. olive oil in a stainless pan over medium-high heat. Once hot, dice the garlic and add it to the pan.Step 3
Once the garlic is fragrant, add in the chicken cubes.Allow the chicken to sear for 2-3 minutes, then flip over.Step 4
Sprinkle half of the salt on top of the chicken and allow the other side to brown for about 2-3 minutes. Remove the chicken from the pan and allow to rest.Step 5
Add the remaining 3 Tbsp. olive oil to the pan and reduce the heat to medium. Add the broccoli florets and toss so they are coated in the olive oil. Allow to brown for a few minutes, add half of the remaining salt and give the pan a shake to loosen up any browned bits on the bottom of the pan.Step 6
Once the broccoli begins to soften, add the chicken back to the pan, season with the remaining salt and give a stir. Cover the pan with a lid and allow to cook for a few minutes until the broccoli is tender and the chicken is cooked through. Season with salt and pepper to taste, if needed.

Used low sodium soy sauce and a small sweet red pepper. Stir fried it all together and yum! My new go to for a quick lunch.

I found it to be very bland and not exciting at all. The only way to dress it up is to add some rich teriaki sauce, but then your adding carbs!

We altered the recipe and added 4 spring onion 6 garlic cloves 2 oz low sodium chicken stock 1 oz lemon 1/2 tsp salt 1/4 tsp pepper

Always a simple favorite and everyone eats it! Today I’m adding in some leftover bacon and parm to sprinkle on top. With 5 cloves of garlic, I’m not sure how anyone could call this ‘bland’.

So good. I used two chicken breast and about 2 cups of broccoli. I added some sliced mushrooms and a small orange pepper for color. Splashed some soy sauce. I will definitely be making this again. It was perfect for two people without leftovers.

I’ve made this twice, first time I followed the recipe exactly. Second time, I added the garlic just before removing the chicken so it didn’t burn. Also added a quarter cup of chicken broth to help loosen the brown bits and soften the broccoli. Severed with low sodium soy sauce and mushrooms on the sideYummy!

I made this today with a big twist! On keto I have a hard time with my fat intake. So I used 1/2 cup cream and 3 oz of cream cheese melted and stirred in for creamy chicken broccoli! It was Heaven! Now I don’t have to consume things I wouldn’t normally eat late at night just to hit my ratios!

I doubled the recipe and added 1 teaspoon Italian seasoning and 2 Tablespoons of coconut aminos. It was very tasty!

As I was cooking I realized that maybe it wouldn’t be as flavorful as my family would like so I put 3 tbsp of low sodium soy sauce in it! It was delish!

I’ll have to substitute some 2 cups of broccoli with spinach and something else. Although I LOVE BROCCOLI I recently found out that it’s bad for those with hypothyroidism. So that was a huge bummer. Any suggestions?

Thank you for that info Snowflake! I have hypothyroidism but hadn’t heard broccoli or cruciferous vegetables are bad. And I love them all! Agreed with your point “all things in moderation”!

Cruciferous vegetables can potentially affect thyroid function but you have to eat a lot every day. Cooking them reduces the chemical involved, so don’t eat them raw and don’t juice them. They’re very good for you! All things in moderation, just restrict your consumption to half a cup a day. Brussels sprouts and Russian kale have the highest amount of goitrogens, so don’t eat them if you are worried.

This was really delicious. I did add the red pepper flakes and some Italian seasoning. Since this was super simple, I will be making again.
