Keto Parmesan Baked Fish
This delicious recipe is a beautiful example of the Mediterranean Keto diet. It is an excellent source of protein and fat, and when served with some fresh, low-carb vegetables, it makes a wonderful meal for the entire family. We have used some hake fillets for this recipe, but you can use any type of white fish fillets you have available. This recipe would also be perfect with some salmon or trout fillets. The dish pairs perfectly with some fresh leafy greens, such as lettuce, arugula, or spinach, but it can also be served with cauliflower rice or baked asparagus. Add a drizzle of olive oil before serving, and enjoy!

Ingredients
Butter
1 tbsp
Extra virgin olive oil
1 tbsp
Salt
0.5 tsp
Black pepper
0.5 tsp
Hake, Pacific, cooked
1 lb
Chives, dried or dehydrated
0.5 tsp
Rosemary, dried
0.5 tsp
Thyme, fresh
2 tbsp, chopped
Parmesan cheese, fresh (hard)

Heavy cream
1.5 cup
Parsley
2 tbsp, chopped

Step 1
Grease a baking dish with olive oil and butter. Season the fish fillets with some salt and pepper on both sides. Put the fillets in the pan.Step 2
Finely chop the parsley. Grate the parmesan. In a medium bowl, combine the heavy cream, parmesan, and parsley. Mix well to combine.Step 3
In a separate bowl, add the remaining salt, pepper, chives, rosemary, and thyme. Mix to combine. Optionally, add some more dried herbs to taste.Step 4
Sprinkle the fish with the prepared herb mixture. Pour in the prepared cream mixture and bake for 30 minutes at 350°F (175°C). When done, remove from the oven and cool for 10 minutes.Step 5
Serve the baked fish with some leafy greens of your choice. Garnish with lemon slices and some fresh thyme. Serve immediately with a drizzle of olive oil.

Just made this tonight for the family, my wife normally hates fish and my 11 and 14 year old aren’t the biggest fans… but man the rave reviews this got. “Restaurant quality fish Dad!” and a “I’d order this and even pay for it!” Thanks again for a great dish that keeps me on track!

I used Alaskan Pollock. Very tasty. Is the calorie and Macro accurate as the majority of butter/oil/park and cream was left in the dish?

Haven't made it yet; are you sure the correct amount of fish for 4 servings is 1 ounce? That probably wouldn't be enough for 1 serving. Please correct the fish amount. Thanks!
