Keto Queso Fundido Cheese Dip
If you really want to impress a group of friends or family, serve them this queso fundido cheese dip. If you’ve never had it before, queso fundido is made with chorizo, green chiles, and lots of cheese. Since it’s served right out of the hot skillet, this makes a great Keto Superbowl cheese dip to share. You could also serve the dip at parties, Saturday movie night with the family, or as a snack for a special occasion. Eat the dip with Keto crackers or chips. You could also make your own crackers or chips with another one of Carb Manager’s recipes. Be careful when serving the queso fundido fresh - your skillet will be hot!
Which types of chorizo to use
Not all chorizo will work for this recipe. Don’t use firm chorizo in links. Instead, use ground chorizo (your choice of mild or hot). Ground chorizo is already seasoned and will be packaged in either plastic tubes or a deli’s fresh packaging.
What is Mexican blend cheese?
Mexican blend shredded cheese can be found in some grocery stores with the other packaged cheese. It is typically a blend of monterey, cheddar, and quesadilla cheese. You can make your own blend in equal parts at home as well.
Can I keep leftovers?
Take warm leftover cheese dip and store it in an airtight container. Keep the dip in your refrigerator for up to 3 days. To reheat the dip, microwave it in the container. Then, you can transfer the hot dip to a serving dish.

Step 1
Break open the chorizo packaging and squeeze the ground chorizo into a heat-safe skillet or cast-iron skillet. Break the chorizo up with a spatula while you heat it over high heat. Cook the chorizo until it’s brown, crispy, and broken up into small pieces.Step 2
Add drained diced tomatoes and green chiles from a can to your skillet. Reduce the heat to medium while the tomatoes and chilis cook just until excess moisture evaporates and they soften. Take the skillet off the heat and leave it to the side.Step 3
Turn on your oven broiler to high heat. Sprinkle a thick layer of shredded cheese over your skillet. Transfer the skillet to your broiler and cook for 5 minutes or longer until the cheese melts. Eat immediately out of the skillet while hot.
