Chili is the ultimate comfort food. For a super-healthy bowl of the good stuff, use ground turkey! Your chili will still be meaty, but the fat content will be leaner and better for you. Fresh bell pepper and zucchini pair very well with turkey, and a jalapeno adds just the right amount of heat. Sour cream and cheddar cheese thicken this stew and just happen to taste really good!

Ingredients

  • Jalapeno Peppers

  • Step 1

    Start by chopping the jalapeno, red bell pepper, and zucchini into bite-sized pieces. Heat the olive oil in a large stewing pot on high heat. Then, toss in the ground turkey. Brown the turkey and break it up with a spatula.

    Stir in the jalapeno, bell pepper, and zucchini. Cover the pot with a lid, and let the ingredients cook on a low heat for about 5 minutes - just enough to let the veggies become tender.

    Add all of the seasonings to the pot. Pour the chicken broth in as well. Stir all the ingredients to everything is coated evenly in spices.

    Cover the pot again, and bring the chili to a strong simmer. Simmer the chili for about 10 minutes. Next, stir in the cauliflower rice. Leave the lid off the pot at this point, and keep the heat at a low simmer.

    Remove about a ½ cup of liquid from the pot. Transfer this liquid to a clean bowl. Use a spoon or fork to stir the sour cream into the ½ c. of liquid.

    Gently stir the thickened liquid back to the pot of chili. Give all the ingredients a good stir. Let the chili simmer for about another 5 minutes to let the liquid reduce and thicken more.

    For serving, fill three bowls with 1 cup of chili. Top off each bowl with 2 TB of cheddar cheese. Enjoy!

    This soup was delicious and easy to make. I reduced the cooking time by using 2 t. Better Than Bouillon and only adding 1 c. water. I used avocado oil instead of the olive oil because it has a higher smoke point. Next time, I'll probably reduce the amount of salt.

      I was skeptical because Im not a fan of riced cauliflower, but I was pleasantly surprised! It had a nice, spicy flavor and the cauliflower actually gave it more substance without killing the flavor. I’d suggest being liberal with the cheddar topping and maybe even add more sour cream.

        Why is it that so many people keep saying that ground turkey is more healthy than ground beef? It's not true. Poultry is not healthier for you than beef. And a ketogenic diet does not tend towards low fat anything. I'm not the keto police, but I'm tired of all the sidestepping to push people away from good nutritional truth.

          Maybe some folks don’t care for ground beef, or maybe one needs to reduce a fat macro for a meal. Technically you can sub out beef for turkey if you like. No reason to criticize. Just simply swap out the turkey for beef if that works better for you. 😊

          Actually not completely true. I have higher cholesterol and need to stay away from red meats. Since I limited my red meat intake my cholesterol is down. Red meat isn’t for everyone.

          Yes ground beef is just as good as turkey, but from a heart healthy perspective turkey is better then beef .. Any cardiologist will tell you to stay away from red meat if you need to maintain a heart healthy diet

                  Spicy! I did not put in the full amount of broth, and I used cream cheese because I didn't have sour cream. So Good.

                    If you prefer less like a soup, then simmer on low heat for about forty minutes which will reduce it considerably. Add cream to the dish at the end as boiling risks it separating. An excellent way to thicken is to put extra veggies in, remove half when cooked, liquidize, and add back to chilli.

                        Very good. I did alter it some. I used banana peppers instead of jalapeño peppers (gives me heartburn), and I added chili powder. I’m not a fan of zucchini so left that out. I used frozen 3 pepper blend with onion. I didn’t measure the seasonings. Just poured and added to taste. Added the sour cream straight to the pot and mixed (I don’t like to do dishes 🤷🏽‍♀️). Came out REALLY good!!!!

                          I was tempted to “doctor” this recipe but gave it a chance as it was written and the seasonings were very good. Enjoyed it and will make it again. Easy to modify with other veggies on hand.

                            It’s more of a veggie soup than a Chili. It tastes good though. Less liquid and it would be perfect.

                              A really great chilly, tasty and filling. I will definitely be making this dish again. Very easy to prepare, and it is worth the prep time to get such a tasty chilly.

                                  Loved it! Consistancy reminds me of Zupa Tuscana. Flavor is fantastic. Doubled and family loved it too.

                                    I loved this soup. I doubled the recipe, other than the jalapeños. It was still quite spicy so if you don't like spice, you may want to reduce the jalapeños.

                                          This is SO good. I doubled the recipe, tripled the spices and added small crimini mushrooms (quartered and browned) for smokiness.
