Step 1
Preheat the oven to 375 degrees Fahrenheit.Step 2
Slice the peppers into half inch strips and cut the tomatoes into wedges. Slice the mushrooms into one inch chunks and add to an oven proof dish.Step 3
Crush the garlic over the vegetables and scatter the fresh herbs, salt and pepper. Drizzle with the lemon juice and olive oil and toss to combine.Step 4
Scatter over the Parmesan and tear over the mozzarella.Step 5
Transfer to the oven for 18-20 minutes until the vegetables are tender and the cheese is melted and golden.
