This bbq bacon slaw combines crunchy red cabbage, radish and aromatic scallions with crispy bacon and a smoky mayonnaise.

Step 1
Heat the olive oil in a skillet over a medium heat. Add the bacon and cook through until crisp and golden. Set aside to cool.Step 2
Thinly slice the cabbage and scallion and slice the radishes into matchsticks. Add to a mixing bowl and toss to combine.Step 3
Add the mayonnaise, lemon juice, salt, pepper, paprika, mustard, cayenne, garlic powder and cumin to a small mixing bowl and stir together to combine.Step 4
Spoon the mayonnaise over the sliced vegetables and stir well to coat.Step 5
Finely chop the crispy bacon and add to the slaw before serving. Toss to combine.
