Keto Chaffle Sausage and Egg Breakfast Sandwich
I love golden brown chaffles, so better yet to convert it into a sandwich with sausage and egg! The chaffle is made in a traditional waffle iron and then cut into quarters and made into sandwiches with american cheese, sausage and egg. The sausage and egg is simply placed into a ramekin together and microwave until cooked through. These sandwiches can be made ahead of time and frozen.

Ingredients
Raw Egg
2 large
Coconut Flour
2 tablespoon
Mayo
2 tablespoon
Baking Powder
½ teaspoon

1 tsp

1 x 2 patties
American Cheese Slices
2 slice - each 3/4 ounce

Step 1
Preheat a waffle iron on medium-high setting. Combine 2 eggs, coconut flour, mayo, baking powder and swerve in a medium mixing bowl.Step 2
Whisk well. Allow batter to sit for 1 minute or so to thicken.Step 3
Spray waffle iron with high temp grill nonstick spray. Pour into hot waffle iron and cook according to iron directions. Remove waffle from iron. Divide chaffle into quarters.Step 4
In the meantime, spray a 4 oz ramekin with nonstick cooking spray. Add one egg, and scramble it with a fork slightly. Add fully cooked sausage patty in the center and microwave on 60% power for about 1 minute until the egg is cooked through. Place egg and sausage on a quarter of the chaffle with a slice of American cheese. Repeat with cooking another egg and sausage for the other sandwich. Enjoy immediately or freeze individually wrapped in plastic wrap.

I make chaffles with just egg, mozzarella and a splash of milk/heavy whipping cream. Put some cheese on the grill first to make it crispy.

How do you make this in a mini waffle iron? I have never made a chaffle and am looking to purchase a waffle iron.

When you get your mini-waffle iron, just use about 1/4 of the batter at a time and cook for about 3 1/2 - 4 minutes.

When you make the batter you pour the dough in the waffle iron. Do not fill it all the way up or it will pour out the sides. Wait until it quits stemming before opening to get it out. I bought the small one that makes one at a time. I wish I would have bought one that makes 4 at a time in circles. That way my cook time would be less.

I made the waffle mix in my Dash mini. It made 4minis. So good! Then just a fried egg. I’m not sure the carb value without the sausage and American cheese. But this was a very good lunch or breakfast recipe for me. Thank you for this recipe!

I didn't use American fake cheese,but traded in for a slice of sharp cheddar cheese,and Apple farm organic sausage patty. So delicious!

I haven't tried w/ the mobile app, but using the web browser you can click the three dots on the upper right of any recipe in Carb Manager and select "Copy to My Foods". Then, just get out of the recipe, switch over to My Foods. You'll see the recipe there. From there you can click the 3 dots on the upper right corner again and select the option to edit the recipe. Then it's just like editing your own recipes. You can change any aspect of the recipe to suit your ingredients. For instance, I replaced the american cheese in this recipe w/ provolone, it brought down the per serving size of fat from 28 to 26 grams. Just a few clicks, but pretty easy to adjust. Hope this helps.
