Keto Ham Swiss Cheese Mug Biscuit
If you love the mug biscuit on this site you will love this ham and swiss mug sandwich! You make the mug biscuit in the microwave, then slice it into quarters and top it with canadian bacon and aged swiss cheese! It will make for the loveliest of breakfasts!

Ingredients
Coconut Flour
1 tablespoon
Almond Flour
3 tablespoon
Baking Powder
¼ teaspoon
The Ultimate Icing Sugar Replacement by Swerve
1 tsp
Coarse Kosher Salt by Morton
⅛ tsp
Raw Egg
1 large
Avocado Oil
2 teaspoon
Canadian Bacon
2 slice - 2 1/2" diameter x 1/4"
Swiss Cheese
1 slice- each 3/4 ounce

Step 1
Mix all dry ingredients together (flours, baking powder, Serve and salt) into a heatproof coffee mug.Step 2
Add in the wet ingredients (egg and avocado oil). Mix until combined, scraping down the sides. Microwave on HIGH for 1 minute. The biscuit will be puffed.Step 3
Remove the biscuit from the mug by running a knife around the edges. Cut biscuit evenly into 4 round circles. Top two of them with one slice of canadian bacon each and ½ of a Swiss cheese slice.Step 4
Microwave again for 15-20 seconds until the cheese is melted and then top each with the other rounds to make a sandwich. Enjoy!

Surprisingly yummy and filling. I substituted 1 slice of bacon instead of the Canadian bacon because that’s what I had in my fridge.

I kind of souped this up a bit, cut in 3rds used turkey breast instead of ham. Layered sandwich with turkey and swiss on both sides and put back In microwave for 30 sec. To melt cheese. I also put a little mayo and mustard ( it is very dry otherwise). It was satisfying and very filling, the extra calories works for me since I am intermittent fasting. I have been having trouble getting my macros during eating window. I end up breaking fast when I dont, newbie here.

I made some changes ... skipped the sweetener and added rosemary to the biscuit dough. Shaped into two biscuits and cooked in the air fryer at 400 degrees for 8 minutes on top of tin foil based on what another reviewer said. I don't much like the microwave texture so this was completely worth it to put it in the air fryer instead. I also used ham steak instead of Canadian bacon which I also cooked in the air fryer while the biscuits were baking. This made two delicious sandwiches and I added whatever sliced cheese I had, also melted in the air fryer! I know if sounds like a lot of work but it really was easy and very little cleanup since I cooked on tinfoil.

Love this! Very filling and flavorful. I added less Swerve and used 4 Tbsp almond flour and left out the coconut flour to cut the sweetness. I added a tiny bit more baking powder to make the biscuit a bit more fluffy. It satisfies my desire for breakfast sandwiches without all the carbs and is so simple to make.

Biscuit??? Not even close! Rubbery. Would rather eat egg and Canadian bacon on their own. Hate the sweet coconut flavor in this biscuit. I love coconut, but this is awful. This is a perfectly good way to ruin Canadian Bacon and eggs.

A salty treat you can adapt for whatever is in your fridge and makes enough for 2 portions for a tasty lunch, supper, party buffet or picnic. I mixed all the ingredients (no sweetener) together+ fresh basil and a spoonful of lactose-free soft cheese. I cooked 4 patties 8 minutes on my air fry setting and served with baby spinach and a few almond-stuffed olives.

Not for a coffee mug. Use ramekins for sure in the oven, as described in the other reply

I think you could bake in an oven or toaster oven. I would try 325-350 for 5-7 minutes for starters and add minutes as needed. For 1-2 servings a toaster oven would use less energy

Did not use ham or swiss. Instead I split in half (next time I'll do 3rds) spread with butter and sugar free pancake syrup. YUMMY only 4 carbs.

It would be great to have the option to print with no photos, so as to save printer ink. I like seeing the photos, I just don't want to print them.
