  • Step 1

    Dice onion into a small dice. Then place a medium saute pan over medium-high heat until hot. Add the oil then the onions, thyme, half of the salt and 1 t black pepper. Cook until the onions have browned.

    Add the tamari and chicken broth and cook for 1 minute on low. Allow to cool.

    In the meantime, combine the ground beef, the rest of the salt, almond flour and eggs in a large mixing bowl. Whisk the eggs while in the bowl so you don’t have to dirty another bowl.

    Add the cooled tamari mixture and then combine the beef with the ingredients very well with a fork.

    You don’t want to overmix, but you want to mix it enough so the meatloaf does not fall apart after cooking. Take note, it is very hard to overmix when you use a fork because it takes more effort.

    Preheat an oven to 325 F. Place the ground beef on parchment lined baking sheet in a mound. Shape it into a loaf.

    Glaze it with the ketchup using a silicone brush. Bake for about 1 hour adding additional time if needed to reach an internal temperature of 165 F. Place a pan of boiling water in the oven with the loaf will help the loaf stay moist.

      Made this again following my notes from the last time. It's delicious and easy as written. This will be my main recipe for meatloaf using the Instant Pot for all. Saute'd the onions in the pot. Cooked the meatloaf on high pressure 30 mins, pot-in-pot with a lid. QR. Broiled with ketchup glaze 8 minutes at 400 under the air fryer lid. The whole round loaf kept its shape when sliced. Two pounds of meat yielded plenty left over for lunch tomorrow and some to freeze for dinner for 2 another day. Also, the meatloaf shrank enough to easily remove it from the pot-in-pot... no foil sling needed. THX FOR A YUMMY RECIPE. HUBS AGREES.

        Can I use Soy sauce. Unable to get tamari sauce where we live. Has anyone ever made this a d then froze it to cook late. Trying to meal prep for surgery Thx

          KEEPER!!!!! DEFINITELY COOK THE ONIONS! I used the Instant pot to sauté the onions. Added 2 TBS green pepper and couldn't taste it. Won't bother next time. Only had 1.5 lbs of ground chuck, so 1/4 c of water + 1/4 tsp of Better Than Bouillon was enough broth. Cooked the loaf Pot-in-Pot with a lid for 30 minutes, Hi Pressure; instant release. Perfect. If I'd had more time I would have broiled the ketchup topping on the loaf for 12 minutes under the air fryer lid. We couldn't wait. Scooped out the meatloaf and topped with ketchup right out of the bottle. Hubs asked for seconds. Next time - start early in the day, but DELISH as it was. This is the first time I used almond flour in a keto meatloaf. It worked. Won't ever mess around with pork rinds, minced mushrooms, cauliflower and all the other experiments we tried. Also the FORK to blend was a great tip. THANKS FOR THE RECIPE! 6 STARS!

              Excellent flavor! I did use ground bison instead of ground beef. Cooking the onions 1st added that flavor. I might use 1/4 cup of chicken broth next time. This recipe is a keeper!

                Used half ground beef and half Italian ground sausage which made it too salty. Used leftovers to make hash (keto meatloaf fried rice?) with stir fried cauliflower rice and a couple beaten eggs we all really enjoyed that. Would make again (without using sausage)
