Low Carb Blueberry Crunch Cereal

You can make as many or as few servings of this Keto cereal as you’d like. This is a great recipe for making a bulk batch in advance. You can easily store the finished cereal in a Ziploc bag or airtight container at room temperature. However, storing the finished cereal in your refrigerator also makes a refreshing, crunchy start to your morning. If you don’t want to prepare a bowl of cereal, you can even enjoy it as a dry snack, like a granola or trail mix. Further in this intro are listed substitutions you can use for the nuts and seeds selected for this Keto cereal. AT your discretion, you may also include other dried Keto fruits or even fresh fruits for a garnish.

Keto Substitutions For This Cereal

This dried blueberry cereal includes a hearty mix of almonds, walnuts, pecans, and pepitas. All of these Keto ingredients are low in carbs and add a surprising amount of fat and protein to your meal. The nuts can be interchangeable with other Keto nuts. This includes Brazil nuts, macadamia, hazelnuts, cashews, and pistachios. Choose unsalted nuts at your grocery store, and add your own salt to your taste when mixing the cereal. To substitute the pepitas, you may select sunflower seeds, chia seeds, flax, or hemp seeds. Let other users know in the comments if you have any other Keto nuts or seeds you like to include in your cereal!

Cereal or Granola?

Many may agree ‘cereal’ and ‘granola’ are fairly interchangeable terms. When you use whole, raw ingredients, your Keto cereal or granola will be pretty identical. Either enjoy this recipe as a breakfast cereal with non-dairy milk or eat it like granola by hand for a filling snack. In the United States, most store-bought cereals are made with puffed rice, oats, and a lot of added sugar. Granolas are made with less-processed ingredients, but are still held together with an ‘edible glue’ made with - you guessed it - a lot of added sugar! Skip the tricky process of trying to copy-cat the cereals you see on store shelves and opt instead for this more natural, whole Keto breakfast cereal.

  • Step 1

Preheat an oven to 325 degrees. Line a sheet tray with parchment paper and set this aside. Collect all your ingredients before starting. If there are other Keto nuts you would like to substitute within this recipe, you can replace either the almonds, walnuts, or pecans with them. You can also substitute a different seed for the pepitas. Check the intro of this recipe for substitution suggestions. You will need to use a liquid sweetener for this Keto cereal recipe, as powdered sweeteners will leave an after taste and burn.
    Step 1
  • Step 2

Chop and toast the pecan and walnuts in a small pan over low heat on your stove. The nuts will become toasted and fragrant after about 30 seconds. In a large mixing bowl, toss together the nuts, seeds, coconut flakes, cinnamon, and dried blueberries. Melt the coconut oil in your microwave. Stir the vanilla and liquid stevia into the melted coconut oil. Use a spatula to fold the cereal with the flavored coconut oil until all ingredients are coated. Spread the cereal out onto your lined sheet tray.
    Step 2
  • Step 3

Bake the tray for 30 minutes. Let the tray of cereal cool completely before serving and eating. After cooling, you can break the cereal apart into bite-sized chunks, much like a granola mix. For serving, pour a ½-cup of blueberry cereal into a bowl and fill with your favorite non-dairy milk. Coconut milk, almond milk, and oat milk are all good options. Top your cereal at your discretion with extra dried blueberry, fresh blueberries, a sprinkle of extra cinnamon, or extra flaked coconut.

I can't believe that I might be the first to comment on this one, does that mean no else has tried this........ WELL YOU DON'T KNOW WHAT YOU"RE MISSING. Very Yummy!! Now for the cooking part, I'll be honest, I burnt the first batch so I almost gave up but I paid for the nuts so I'm using them so I started another batch and paid a little more attention. Make sure you preheat oven at 325 and I didn't go the full 30 mins, more like 20 to 25 mins. Might have been because of my first experience however I'm glad I sucked it up and attempted again. Well worth it!!
