Keto Scallops in Bacon Butter Sauce

Not only are the scallops tender and gently seasoned, but they are paired with a delicious butter sauce that is extra flavorful with bacon and a dash of spicy crushed red pepper flakes. Ingredients
Bacon
3 medium slice
Butter
½ tablespoon
Salt
¼ teaspoon
Black Pepper
¼ tsp
Crushed Red Pepper by Simply Organic
½ tsp
Mollusks Scallop Mixed Species Raw

Step 1
Cook the bacon in a large skillet over high heat until the bacon is extra crispy. Transfer the cooked bacon aside to cool, but leave the bacon grease in the skillet.Step 2
Melt the butter in the skillet to deglaze it. Turn the heat down to low, and stir in the first amount of salt, pepper, and all the red pepper flakes. Let the butter cook for about 15 seconds to warm the seasonings.Step 3
Place the scallops and their juices in the hot butter. Sprinkle the second amount of salt and pepper over the exposed sides. Cover the skillet with a lid and cook the scallops for about 4-5 minutes without disturbing them.Step 4
Remove the lid. Use a spoon to scoop the butter sauce and pour it over the tops of the scallops. Don’t turn the scallops over at any point, but do lift them gently to check for slightly golden bottoms. Continue pouring the butter sauce over the scallops for about a minute.Step 5
Chop the bacon into tiny bits, and distribute the bacon back into the skillet. Let the scallops cook with the bacon for an additional minute. Then, remove the skillet from the heat for serving. Garnish with freshly chopped parsley and enjoy!

I used smaller scallops, omitted the bacon (not a bacon ater) lol and added fresh mushrooms. So very good, I followed the cooking directions and the scallops were like butter!! I platted on a bed of baby spinach.

Very good! I would have never thought to add butter. It made a nice sauce. I added scallions and served it over escarole.

Wasn't bad. I think I bought the wrong size scallops though as 14oz came out to be 8 scallops. I did need a bit of salt with it though.
